One is a light mid-afternoon spread associated with leisure; the other was a substantial early-evening meal eaten by people who had been working. Hotels worldwide now sell the first under the name of the second, which is close to an exact inversion.

What happens after swallowing is where experienced drinkers find most of the difference between a good tea and an ordinary one, and English has almost no vocabulary for it. Chinese tea culture has a precise set of terms, and they are worth borrowing.

The most repeated rule in English-language tea writing is a useful default badly explained. What goes wrong at the top of the range is a combination of decisions, and temperature is only one of them.
- “Strong” tea means four different things
The word does duty for concentration, extraction, astringency and caffeine content, which vary independently. A great deal of brewing advice is unusable because it does not say which one is meant.

Everything a drinker judges a tea by — the down on a bud, the thickness of the wet leaf, the serrated edge in the bottom of a gaiwan — is an anatomical feature of a specific evergreen shrub. It is worth knowing what those features are and what they do for the plant.
