Astringency is something you feel, not something you taste

Bitterness is registered by the tongue as a taste. Astringency is a physical sensation across the whole mouth — a drying, tightening, roughening. They have different causes, different fixes, and confusing them makes most tea troubleshooting advice fail.

The distinction, stated properly

Bitterness is a taste: a quality reported by the tongue in the same category as sweet and sour. Astringency is a tactile sensation: the mouth feels drier, tighter and rougher, the tongue seems to grip the palate, and the effect is spread across the mouth rather than located on the tongue. The mechanism is physical rather than gustatory — the polyphenols in tea associate with the proteins in saliva and disrupt the thin lubricating film that normally coats the mouth, and what is registered is the loss of that lubrication. This is why astringency feels like a texture, why it can be present without any bitterness at all, and why a tea can be strongly bitter and not astringent. Two different senses are reporting two different events, and running them together is the single most common error in consumer tea writing. There is a straightforward demonstration of the tactile nature of the sensation. Strong black tea and a dry red wine produce recognisably the same drying grip despite tasting nothing alike, and unripe fruit produces it with no bitterness at all — the common factor is a class of compounds rather than a flavour. Anyone who has noticed that resemblance has already made the distinction this page is about, and applying it deliberately to tea is a small step from there.

How astringency behaves differently in time

The behaviour over a session is the easiest way to tell the two apart in practice. Bitterness arrives quickly, peaks and fades within the sip. Astringency develops more slowly, persists after swallowing, and accumulates across sips and across cups — a session of an astringent tea gets progressively more drying whether or not the tea itself changes, because the mouth has less lubrication to lose each time. It also takes time to recover, which is why comparative tasting of astringent teas is limited to a few cups before the palate stops reporting usefully. Anyone who finds that the third cup of a black tea is harsher than the first, from the same pot, is watching accumulation rather than a change in the liquor. Because it accumulates, the order in which teas are tasted matters more than most people allow for. A delicate green tea placed after a strongly astringent black tea will read as thin and flat when it is neither, and the reverse ordering flatters both. Any comparative tasting should therefore run from delicate to assertive, with water between, and should stop before the palate does — which is usually sooner than the number of cups on the table suggests.

The several kinds of astringency

Tasters distinguish at least three, and the distinctions are useful. A drying astringency, which reads as moisture being removed. A puckering astringency, which reads as tightening, and which is the sensation most associated with unripe fruit. And a rough or grainy astringency, which reads as texture on the tongue’s surface. Different teas produce different mixtures: young sheng pu-erh often gives a strong puckering grip that resolves quickly, a coarse broken black tea gives a flat drying roughness that does not, and a fine Darjeeling gives a brisk, clean astringency that is part of what the style is admired for. TeaHQ’s controlled vocabulary keeps `drying` and `astringent` as separate mouthfeel terms for this reason, and neither is a synonym for `bitter`, which sits in the same list because a strongly bitter tea is describable as such texturally. Milk and other additions act directly on this dimension, which is one reason the tradition of adding milk to strong black tea persists. Dairy proteins interact with the same leaf compounds that would otherwise act on saliva, so the drying grip is markedly softened — this is a physical interaction in the cup rather than a matter of masking a flavour. It is also why milk does comparatively little for bitterness, and why a tea that is bitter rather than astringent is not much improved by it.

What actually raises it

Four levers, in rough order of strength. Leaf particle size: broken leaf, fannings and dust release their polyphenols far faster than whole leaf, so grade is a stronger determinant of astringency than most people expect. Agitation: stirring, squeezing a bag, shaking an infuser or pouring turbulently all increase extraction of the fraction responsible, which is why the same bag squeezed and unsqueezed produces noticeably different cups. Steep time, since the larger polyphenols continue coming out after the fast sweet fraction has largely finished. And water chemistry, where hard, heavily mineralised water increases the drying impression while contributing little to bitterness. Temperature matters too, but it is the strongest lever on bitterness and a weaker one here — which is precisely why the two need different remedies. Two further variables are worth adding. Leaf ratio raises astringency in proportion, as it raises everything, but it does so without shifting the balance the way a longer steep does — so a stronger short brew is generally less drying than a weaker long one at the same colour. And the tea’s own manufacture sets a ceiling: a fully oxidised leaf has converted much of the fraction responsible into other compounds, which is why a black tea and a green tea of comparable strength produce quite different kinds of grip.

Why the different fixes matter

If a cup is bitter, lower the water temperature first and shorten the steep second. If a cup is astringent, look at leaf grade, at how the leaf is being agitated, and at the water before touching the temperature. Advice that offers one remedy for both — almost all advice does — will solve half of any given problem and leave the drinker unsure whether they followed it correctly. The diagnostic question takes one sip: is the unwelcome thing a flavour on the tongue, or a feeling across the mouth. A worked example makes the value of the distinction concrete. A drinker whose green tea is unpleasant lowers the temperature and finds it improved but still drying; the residual drying is a grade and agitation problem, and squeezing the infuser basket at the end was making it worse. Two adjustments, two causes, and the second would never have been found by continuing to lower the temperature. Diagnosing before adjusting is the whole of the method, and it takes one sip.

When astringency is the point

Briskness — the lively, clean, mouth-refreshing grip of a good black tea — is astringency in its desirable form, and it is one of the qualities professional black tea evaluation is explicitly looking for. A Darjeeling or an Assam without it would be flabby. In green tea a certain grip provides structure against the sweetness, and a completely unastringent green tea often reads as flat. The Chinese vocabulary is more precise than English here: se, roughly astringency, is distinguished from ku, bitterness, and a tea whose astringency converts quickly into a returning sweetness is described in quite different terms from one where it simply sits. The goal is therefore not the removal of astringency but its balance and its resolution, which is a subtler and more useful target than the advice to make tea less bitter suggests. There is a further reason not to aim for its removal, which is structural rather than aesthetic. Astringency provides the contrast against which sweetness registers, so a tea brewed to eliminate it often reads as flat and vaguely sugary rather than as sweet. This is the same reason a very low-temperature steep of a good green tea can be disappointing despite being technically correct: the selection was too aggressive, and what came out has nothing to push against. Balance rather than minimisation is the target.
