Compression as a storage decision
Pressing tea into a cake, brick, tuocha or mushroom began as a transport measure and became a storage technology. A compressed cake has a very low ratio of exposed surface to mass: the outer layer meets the air, and the interior is a slow, partially isolated environment where change proceeds more gradually and more evenly. That is why compressed and loose material from the same batch diverge over years — the loose leaf ages faster, more aromatically and less evenly, while the cake ages slower and deeper. Neither is simply better. Loose sheng maocha is often more fragrant young and is drunk that way deliberately; the cake is a bet on a longer horizon. The practical implication is that the format is information: a producer who pressed a tea expected it to be kept, and a tea sold loose was more often expected to be drunk. Compression also has a second, quite different consequence that only shows up years later. Because the interior of a cake experiences a slower and more stable environment than its outer layers, an old cake is not uniform: the outside has aged faster and has met more air, and material from the centre can taste noticeably younger. Experienced drinkers take this into account when sampling, and it is one reason a chunk taken from the edge of a cake is not a fair sample of the whole.
What the wrapper is for
The cotton-paper wrapper is a functional part of the store and should stay on. It is permeable enough to allow the slow exchange the tea needs, opaque enough to exclude light, and it holds the cake’s own aromatics loosely around it rather than letting them disperse. It also carries the identifying information — factory, recipe, year, and the small printed ticket known as a neifei that is pressed into the cake itself, plus any larger paper insert. Removing the wrapper for display forfeits all of that. Above the individual cake, several cakes are traditionally bundled into a tong wrapped in bamboo leaf or bamboo shoot husk, and a tong stored intact is a better store than the same cakes stored separately, both because of the buffering and because of the mass effect. The general rule is that original packaging on dark tea is storage equipment, which is close to the opposite of the rule for most other food. There is one situation in which the wrapper should come off, and it is worth naming so the rule does not become superstition. A wrapper that has itself become damp, mouldy or contaminated is now a source rather than a protection, and replacing it with clean cotton paper is the correct response. Some storers also loosen or remove wrappers temporarily to air a cake that has arrived with an off note. Both are interventions with a reason; removing a wrapper because the cake looks better without it is not.
Cake against loose leaf, once it is open
Once a cake has been opened, the calculation shifts. A cake with a section removed has a rough exposed face and is no longer the sealed interior it was, so it will age faster from that face inward. This is not a disaster and is the normal condition of every cake anyone is drinking, but it argues for two habits. Take from one area rather than several, so that a single face is exposed rather than the cake becoming a shell. And keep the removed leaf separately in a small jar rather than loose in the wrapper, where it will crumble further and dust out. Loose dark tea — Liu Bao, loose maocha, aged loose sheng — is stored in the same conditions as a cake but in an unglazed jar or a carton rather than a wrapper, and because it presents more surface it is generally drunk on a shorter horizon. A related habit worth adopting is to break off a reasonable quantity at once rather than returning to the cake for every session. Each visit means handling, exposure and a further disturbed face, so five sessions’ worth removed in one operation and kept in a small jar costs the cake less than five separate excavations. This is the same headspace-and-handling logic that governs every other storage decision in this catalogue, applied to an object that happens to be solid.
Breaking a cake: the tool and the technique
The tool is a pu-erh pick or awl — a short, stout, flat-bladed spike with a handle — and not a knife, which cuts through leaf rather than parting it. The technique is to work with the cake’s structure rather than against it. Compressed cakes are built in layers, so the pick is inserted at a shallow angle into the side of the cake, parallel to the face, and levered gently to separate a layer rather than driven perpendicular into the front. Work from the edge or from the dimpled centre on the reverse, take a section at a time, and stop as soon as a piece releases. Done this way, a cake yields flakes of intact leaf. Done by stabbing the face, it yields fragments and dust, and the difference shows immediately in the cup, because broken leaf extracts faster and brings bitterness and astringency forward in every infusion. Two safety-adjacent points, since the tool is a spike and the material is hard. Work with the cake resting flat on a tray or a cloth rather than held in the hand, and lever rather than push, so that a piece releasing suddenly does not carry the pick anywhere unintended. A cha he or a shallow tray also catches the fragments that would otherwise scatter, which is the difference between recovering the fines for later use and sweeping them off the floor.
Why the fragments matter more than they look
The particle size of the leaf in the pot is one of the strongest brewing variables there is, and breaking a cake badly changes it without the drinker noticing they have made a decision. A gongfu session run on flakes of intact compressed leaf opens progressively over many infusions; the same tea reduced to crumbs floods the first two steeps and is exhausted early. This is also why the fine material that accumulates at the bottom of a storage jar should be brewed separately rather than mixed in — it is not lower-quality tea, it is a different extraction speed, and combining the two makes both harder to brew. Some drinkers deliberately keep a jar of accumulated fines for a quick strong cup, which is a sensible use rather than a compromise. The same reasoning explains a common disappointment with a first pu-erh session. A drinker who has hacked a chunk from a cake and dropped it whole into a gaiwan gets a first infusion that tastes of very little, because water has barely penetrated the compressed piece, followed by a third or fourth that is suddenly overwhelming as the chunk finally opens. Separating the leaf into flakes at the start, rather than relying on the water to do it, is what makes the session progress evenly.
Tuocha, bricks and the shapes that resist
Not all compressed formats behave alike. Tuocha are pressed hard into a bowl shape and are among the most difficult to open cleanly; small tuocha are often best brewed whole, allowed to expand in the vessel across the first infusions, since attempting to break them produces mostly dust. Bricks are pressed hardest of all, historically because they were made for long-distance transport, and generally require the pick to be worked along an edge. Mini tuocha and dragon balls are pressed as single portions and are designed to be used whole. Loose material pressed lightly into a cake — some contemporary white tea cakes especially — separates easily by hand. It is worth handling a new format gently at first to learn how hard it has been pressed, because force applied to a lightly pressed cake destroys it and force is exactly what a hard brick needs. The degree of compression is also a historical and commercial signal rather than only a practical one. Formats made for long overland transport were pressed hard because they had to survive it, and the traditions attached to those routes — the bricks of the tea-horse trade, the tightly pressed tuocha — still make them today. A very hard press on a contemporary cake sometimes reflects that inheritance and sometimes reflects a factory optimising for shipping, and either way it tells the buyer how the tea will need to be handled.
The one thing not to do
Do not break a whole cake up at once and decant it into a jar. It is tempting, because it makes the tea convenient, and it converts a slow, well-protected store into a fast, exposed one permanently. A cake that would have continued developing for another fifteen years in its wrapper will not do so as a jar of loose fragments, and the decision cannot be undone. The correct arrangement is the boring one: break off what will be drunk over the next few weeks, keep that in a small jar, and leave the rest of the cake wrapped. The same principle covers the other common temptation, which is opening several cakes at once to compare them. Two open cakes are two ageing faces; the comparison is worth making, and it is worth making with samples rather than by opening the collection. The reasoning generalises beyond cakes to every storage decision in this set of pages. Almost all of them involve resisting a convenience that costs something irreversible: decanting into a prettier jar, opening a second tea before finishing the first, refrigerating a tin that will be opened daily, checking on an ageing cake. In each case the convenience is real and the cost is invisible at the moment it is incurred, which is precisely why the rules have to be stated rather than discovered.
