Flowers, fruit and seed: the part of the plant growers would rather not have

Tea is a camellia and it flowers like one — white petals, a boss of yellow stamens, a scent. In a commercial field this is a problem rather than a pleasure, and understanding why explains a good deal about how tea plants are managed.

What a tea flower is

The flower is small, white or faintly cream, with a modest number of petals around a dense centre of yellow stamens, carried singly or in small groups in the leaf axils on a short stalk. It is recognisably a camellia flower and unmistakably a plainer one than the ornamental species bred for gardens. It is fragrant, mildly, and it is insect-pollinated. In most producing regions flowering runs through the autumn, which puts it at the end of the growing season rather than at the start — the reverse of the pattern most temperate fruit crops follow, and one reason a tea field in flower surprises visitors who expect blossom in spring. Because tea is a woody evergreen that flowers late and takes a long time to ripen fruit, a plant can carry this year’s flowers and last year’s developing fruit at the same time. Anyone who has looked closely at an unpruned tea plant in autumn has probably seen both without registering what they were looking at.

Why growers do not want it

A flower is a reproductive structure, and building one costs the plant resources that would otherwise go into vegetative growth — which is to say, into the shoots that are the crop. A heavily flowering bush is spending on something the grower cannot sell. Worse, heavy flowering is frequently a signal rather than merely a cost: plants under strain, at the end of a dry season, in poor ground, or ageing past their productive prime, tend to flower more, because a plant with a compromised future puts resources into reproduction. So a field in heavy flower is telling a manager something they would rather not hear. In practice most of it is dealt with without anyone deciding to. Regular plucking removes shoot tips and the axillary positions where flower buds would form, and the pruning cycle removes wood before much of it accumulates. A well-managed, regularly harvested field flowers lightly. The flowering you see in photographs is generally on field edges, on unpruned stands, in gardens, or during a period when the field is out of production.

The fruit, and how slow it is

A pollinated flower develops into a woody capsule, usually holding one to three seeds, and it takes a long time to ripen — on the order of a year, so the fruit maturing on a plant was set by the previous season’s flowers. The seeds are large, round to flattened depending how many share a capsule, oily and brown, and they lose viability quickly once dry, which is the practical fact that mattered historically: tea seed does not travel or store well, and shipping it across the world in the era of sail was a genuinely difficult logistical problem rather than a trivial one. The slowness of the cycle has a breeding consequence too. A cross made this year gives seed the following year, seedlings the year after, and a plant old enough to assess several years after that. When TeaHQ says elsewhere that developing a tea cultivar takes decades, this is where a substantial part of that time goes, and it is not a solvable inefficiency.

Seed as a crop in its own right

Where tea is propagated by seed, seed is a product with its own management. A seed garden is planted for the purpose, at wider spacing, and is not harvested for leaf — the plants are allowed to grow tall and flower freely, which is the opposite of everything done to a plucking field. Because tea does not readily self-pollinate, a seed garden is deliberately composed of more than one type so that the crossing produces the intended population. Seed is collected, tested for viability, and sown promptly. This still happens: Turkey’s industry runs largely on seed, parts of Yunnan and northern Vietnam do, and seed gardens are maintained in several origins alongside nurseries. It is worth noting how differently the two systems look on the ground. A nursery is a shaded, irrigated, intensively managed structure producing copies. A seed garden is a loose stand of large plants producing variation. They are both propagation, and they produce fields with almost nothing in common.

Tea seed oil, and the plant it usually comes from

Tea seeds are oily, and oil is pressed from them. Here a genuine confusion needs clearing up, because two different plants are involved. Most of what is sold in East Asia as tea oil or camellia oil for cooking comes from Camellia oleifera, a separate species grown specifically as an oilseed crop across southern China, with larger seeds and a much higher oil yield. Oil from Camellia sinensis — actual tea — is a minor by-product, pressed where seed is available, and used for cooking, for cosmetics and traditionally for maintaining ironware and tools. Two plants, one common name, and the labelling rarely distinguishes them. The same confusion runs through the ornamental side of the genus. Camellia japonica and Camellia sasanqua, the camellias of gardens, are relatives of the tea plant and are not tea; oil is pressed from sasanqua seed as well. Dried tea flowers are sold and infused, usually alongside or blended with tea leaf, and they turn up most often in Chinese and Taiwanese products. They give a light, sweetish, faintly floral infusion of quite a different character from the leaf, and they are a small and genuinely marginal product rather than a hidden classic. As with any part of a plant that is normally discarded, availability is a function of somebody deciding to collect it. It is worth being careful with the vocabulary here, because flowering tea is a different thing again: those are hand-tied bundles of tea leaves with a dried flower of another plant — amaranth, jasmine, lily — sewn inside, which open in a glass pot. That product contains a flower and it is not made from tea flowers. Three separate things share overlapping names, which is close to the normal condition in this subject.
