The steps between the steps

Spreading, cooling, resting, turning. Four operations that occupy most of the elapsed time in tea manufacture, have names in every producing language, and are compressed in English writing into the word “then”.

The word “then” is hiding most of the process

Read almost any account of tea manufacture and you will find a chain of active verbs: the leaf is withered, then rolled, then oxidised, then dried. Every one of those is real and between each pair there is an interval that is also real, also named, also staffed, and usually longer than the operation on either side of it. Oolong is the extreme case. A shake lasts minutes and the standing rest that follows lasts up to two hours, and there are four to six cycles across a night — so by elapsed time, the overwhelming majority of oolong manufacture consists of leaf lying completely still. An account that describes oolong as shaken has described perhaps a twentieth of it. The same pattern holds elsewhere in smaller proportions, and it is worth learning to notice, because the intervals are where the judgement happens.

Spreading and cooling: stopping an operation cleanly

Every hot step in tea has a shadow. The leaf leaves the pan, the drum or the steamer carrying stored heat and surface moisture, and it keeps changing on its own until something removes them. Tan liang is the deliberate answer: tip the leaf out thin, blow or fan it, turn it, and hold it until it is at room temperature and its moisture has equalised between blade and stem. On a Chinese green tea line it happens after the fixation and again after every firing pass. On a Japanese line it is a dedicated blower within seconds of the steamer, because a continuous line has no interval in which leaf could cool by standing. There is also a pre-fixation form, tan fang, in which fresh intake is spread for a few hours so the whole bed enters the pan at one moisture. Its presence is invisible and its absence is not: leaf rolled or packed hot develops a stewed, yellowed, faintly sour character, and a great many green teas that have lost their fresh top note lost it here.

Resting: letting the leaf equalise, and letting the maker see

Rests do two different jobs and it is worth separating them. Some are physical. The interval between the two drying passes exists because moisture inside the leaf has to migrate outward before it can evaporate, and without the interval you get a dry shell around a damp core. Hui chao — letting cooled leaf stand until moisture from the stem returns to a case-hardened blade — exists so that the next shaping pass has something pliable to work with. Others are perceptual. A roasted oolong is rested for weeks or months not because anything needs to migrate but because a tea straight off the charcoal tastes of charcoal and cannot be judged; the rest is what makes the roast assessable, and the decision to roast again is taken at the end of it. Both kinds are steps. Neither appears in a recipe, and both are the first thing dropped when a factory is behind schedule.

Turning: steering something that is running by itself

A fermenting pile of dark tea generates its own heat, and if nothing intervenes the core climbs until the leaf carbonises there while the outside stays raw. Turning is the control system: shovel the whole mass over so that outside becomes inside, break up the compaction, re-heap and re-cover. Each turn drops the core temperature, admits oxygen, and evens out moisture and microbial population. The manager judges the schedule with a hand or a probe in the core, and the record of turns is the record of the batch — which is why quoting a fermentation as forty-five days says almost nothing, and why two piles run for identical durations can produce unrelated teas. The same operation performed once more at the end, with the heap spread out rather than re-covered, is what stops the process. A step and its own opposite, distinguished only by what is done afterwards.

Why the intervals are the first thing to go

There is a pattern in which corner gets cut under pressure, and it is consistent across categories: the intervals, because they look like waiting. A drier that is running behind skips the rest between passes and the tea keeps badly six months later. A jasmine line that is short of capacity leaves the spent flowers in for an extra few hours and the whole lot goes heavy. A roasting house that needs to ship judges the roast before its rest and over-roasts. In every case the operation on either side was performed correctly and the result is worse, which is why a fault list organised by operation misses so much.
