Altitude, and what it actually changes

High-grown is the most heavily used quality claim in tea and one of the least examined. Altitude is not a flavour: it is a proxy for temperature, and the mechanism runs through how fast a shoot grows.

Air cools with height at a fairly predictable rate, so a field a thousand metres higher than another at the same latitude is meaningfully colder, both in daily average and in how cold it gets at night. Everything else attributed to altitude follows from that, plus two companions: high places are often cloudier and mistier, which cuts direct light and raises humidity, and the diurnal range — the gap between day and night temperature — is usually wider. None of these is altitude as such. They are what altitude happens to bring with it, which is why altitude claims transfer badly between latitudes. Latitude does much of the same work by a different route. A field at three hundred metres in Shizuoka and one at two thousand metres in Yunnan can experience comparable growing-season temperatures, which is why northern low-altitude origins and southern high-altitude ones so often produce teas that are described in similar language. Metres above sea level is a proxy, and it is only a good one within a band of latitude.

The mechanism: shoots grow more slowly

Cooler temperatures slow shoot extension. A high field’s plucking round is longer, its annual yield is lower, and each shoot spends more days growing before it reaches the picking standard. Slow-grown shoots tend to be smaller, denser and thicker-leaved, and the compounds that accumulate in a leaf accumulate over a longer period relative to the amount of tissue being built. That is the whole argument, and it is a good one: it explains why high-grown tea is more concentrated and more aromatic, why it costs more, and why the same cultivar in a warm lowland field gives more tea that tastes of less. Mist adds a second mechanism on top of the first. Persistent cloud cuts direct light without cutting it as sharply as a cover would, and the effect is in the same direction as shading — slower growth, and a shift in the leaf’s balance away from the compounds associated with astringency. Yunnan, Alishan and the Sri Lankan high country all trade on it.

Where elevation is formally graded

Sri Lanka is the clearest case, dividing its tea into low-grown, mid-grown and high-grown bands, with the high-grown districts around Nuwara Eliya and Dimbula giving light, brisk, aromatic teas, and the low-grown south giving heavy, dark, strongly coloured liquors that are sold into entirely different markets. Taiwan’s gao shan high-mountain oolongs work the same way, with named mountains functioning as elevation claims and Da Yu Ling standing at the top of the ladder. In both cases the grading is descriptive of style, not of merit, and low-grown Ruhuna is not a failed attempt at Nuwara Eliya. The two markets involved are almost entirely separate. Sri Lanka’s low-grown teas are made largely for the Middle East and for markets that want strength and colour, and they are frequently the more profitable part of the industry; the high-grown districts sell into a different set of buyers who want brightness and aroma. When high-grown prices are described as being under pressure, this is the comparison being made.

Where the claim breaks down

Two failures are common. The first is comparing across latitudes: a field at 1,200 metres near the equator in Kenya and a field at 1,200 metres in Zhejiang are not experiencing the same climate at all, so the same number means different things. The second is that altitude rarely travels alone — high fields are also often older, more often hand-plucked, more often planted to particular cultivars, and worked by producers who have chosen to make fine tea. Attributing the whole difference to metres above sea level takes credit away from the picker and the maker, who typically deserve most of it. A third failure is arithmetic. Elevation figures quoted for a tea are often the highest point on the estate rather than the field the leaf came from, and estates on a hillside can span several hundred metres. Where the number is stated to the metre and no field is named, it is a marketing figure, and there is no mechanism by which a buyer can check it.

The costs of height

High fields are less productive per hectare, harder to reach, more exposed to frost and hail, and more difficult to mechanise because the terrain is steep. They also have a shorter growing season. The premium high-grown tea commands is not a pure quality premium but partly a cost recovery, and in places where the premium has fallen — as it has for parts of the Sri Lankan high country during periods of weak auction prices — the economics of maintaining a high estate become very difficult very quickly. There is a labour dimension as well. High fields are usually the ones that cannot be mechanised, so they carry the highest labour requirement per kilogram at exactly the point where yields are lowest. Where rural labour becomes scarce or better paid elsewhere, the high fields are the first to become unworkable — which is why abandonment in tea tends to start at the top of a hillside rather than at the bottom.

How to use an altitude figure

Take it as one input among several, and ask what it is a proxy for at that particular latitude. A stated elevation is genuinely useful when comparing fields within one region, because there the other variables move together and the number is doing real work. Across regions it is close to meaningless on its own. And a claim like high-grown with no figure, no district and no comparison is a marketing phrase, since there is no international definition of what altitude qualifies. The one place the term is anchored is Sri Lanka, where the low, mid and high bands are defined and used consistently in the trade, and to a lesser extent Taiwan, where gao shan is conventionally understood to start somewhere around a thousand metres. Outside those two contexts, high-grown means whatever the person writing the label wants it to mean. The better question to put to a seller is not how high but how slow. Altitude is being used as a proxy for growth rate, and a producer who understands their own field can usually answer the underlying question directly — how long their plucking round runs, how many harvests they take in a year, when their spring picking starts. Those answers are harder to fake and considerably more informative than a figure in metres.
