Sheng and shou: five identical steps and one fork

Raw and ripe pu-erh are made the same way for five operations and then part company at one. Everything the trade argues about turns on what sits in that fork, and nothing at all before it differs.

The shared prefix, in full

Both routes pluck large-leaf material to a coarser standard than a fine green tea would use. Both wither briefly and lightly, enough to make the leaf handleable and no more. Both fix the leaf — and both run the fixation deliberately cooler and less completely than a green tea would, so that some enzymatic capacity survives. Both roll the leaf to rupture it and set a loose strip. And both dry it in the open, in the sun, at low temperature. What comes out at the end of those five steps is sheng maocha, and it is one product: the same material, frequently from the same farmers, often sold from the same warehouse. A great deal of confusion about pu-erh evaporates once this is clear. Shou is not a different plant, a different region or a different standard of care. Up to the fifth step it is not a different tea.

The fork itself

At step six the routes separate. On one side, the maocha is held — sometimes for days, sometimes for years — then steamed briefly, pressed into a cake, dried slowly on racks, wrapped in porous paper and stored. Nothing microbial is cultivated; the leaf changes slowly, over decades, because the sun-drying left it able to. On the other side, measured water is sprayed onto the dry maocha and worked through it until the moisture is evenly distributed, the wetted leaf is heaped and covered, and a mixed population of moulds, yeasts and bacteria grows through it for weeks. The pile generates its own heat, and it is steered by turning. At the end it is opened out and dried, and only then is the tea sorted, steamed and pressed. The two routes converge again at the steaming and the press, but by then they are carrying completely different material.

The operation in the fork is the only genuinely microbial step in the mainstream tea catalogue, and it does something no amount of storage does. The bitterness and astringency of young raw material are largely consumed, the liquor darkens to something close to opaque, and a woody, earthy register appears that raw material does not develop even over decades. That last point is the one worth insisting on, because the standard description of shou is that it approximates in weeks what raw pu-erh takes decades to do. The technique was, by the usual account, developed with something like that intention — TeaHQ dates it to the second half of the twentieth century on general reading rather than on any source it has verified — but the result is not a fast version of aged sheng. It is a different tea made by a different mechanism, and a thirty-year-old raw cake and a well-made ripe one are not two points on one line.

What this makes checkable

Modelling the two as a shared prefix and a fork has a practical payoff: it turns several vague trade arguments into specific questions about specific steps. Is a light-fermented shou a shou or a sheng? It is a shou, because it went through the fork; how far the pile was run is a setting inside the operation, not a different route. Can a shou continue to age? Yes, and it changes far less than a sheng because the material it starts from has already been transformed. Does the sun-drying still matter for a shou, given that the fermentation will dominate? It matters less, and the maocha is made the same way anyway, which is why the question is asked so often and answered so inconsistently. In each case the useful move is the same: locate the disagreement at a step, and ask what that step does.

The general lesson, which is not about pu-erh

This pattern — long shared prefix, one fork, unrelated products — recurs across tea and is worth recognising for its own sake. A light rolled oolong and a heavily roasted strip oolong share everything through the drying and then one of them acquires a picking-roasting-resting loop that runs for months. A loose white tea and a pressed white cake are identical through the drying, and then one of them is steamed and pressed. A sencha and a hojicha are the same manufacture until the setting on one machine. In each case a reader who knows where the fork is can predict most of what will differ in the cup, and a reader who knows only the two category names cannot. That is the whole argument for modelling routes rather than categories.
