Why a plant that grows leaves is cut back
Repeated harvesting leaves a residue. Every plucking round removes shoots and leaves stubs, and those stubs accumulate into a dense congested layer at the top of the bush that grows thicker every year. Eventually new shoots emerging from that mat are weak, small and slow, the table has risen beyond comfortable reach, and dead wood inside the frame becomes an entry point for rot. Pruning removes the accumulation and forces the plant to rebuild from healthy wood lower down. It costs a substantial part of a year’s crop from that field, and it is not optional: an unpruned field does not go on yielding, it declines and then fails. There is a second purpose that is easy to miss. Pruning is also how the height of the plucking table is controlled, and the table rises a little with every round because each shoot is taken above a leaf that then stays. Left uncorrected for long enough, a field becomes literally too tall to harvest from the ground, which is a slower and more embarrassing failure than the first one.
The vocabulary, which is more precise than it looks
The operations form a ladder by severity. A level-off skiff removes only the uneven top few centimetres to restore a flat table. A light or medium skiff takes more, cutting into the previous season’s growth. A deep skiff goes further again. A light prune cuts back into older wood at a set height, and a heavy or hard prune takes the bush down close to its main frame. At the bottom of the ladder is collar pruning, which removes almost everything above ground and asks the plant to regenerate from the base. Each step down the ladder gives a longer recovery and a bigger subsequent response, and estates plan them as a rotation so that only a fraction of the planted area is out of production in any year. The vocabulary varies between origins and the ladder does not. What an Assam manager calls a light skiff and what a Sri Lankan one calls a level-off may not be the same depth of cut, and Chinese and Japanese practice use their own terms entirely. What transfers is the principle: the deeper the cut, the longer the field is out, and the stronger and longer-lasting the response when it comes back.
The cycle and the yield curve
After a hard prune, a field produces almost nothing for months, then comes back strongly: the first full year after pruning is typically the most productive of the cycle, and yield then declines year on year as congestion rebuilds, until the next prune. The cycle length varies with climate and altitude and is commonly somewhere in the range of three to five years, longer in cool, slow-growing places. This has a direct consequence for buyers that is rarely stated: a field’s position in its cycle affects both how much it yields and what the shoots are like, and the difference between first-year-after-prune material and fourth-year material from the same bushes is real. This is also one of the honest explanations for why an estate’s tea varies year to year in ways that have nothing to do with weather or with a change of manager. A buyer who tastes a garden annually is tasting different points on a rotating cycle across different blocks, and unless the factory is separating lots by block — which many do not — the blend is quietly moving underneath them.
Timing, and the risk in it
Pruning is timed to the plant’s slowest period — the cold season in seasonal climates, the dry season in others — because a bush cut back hard has almost no leaf area with which to support itself and needs its reserves. Cutting at the wrong moment, or cutting a bush that has been stressed by drought, kills plants outright. Growers therefore watch the plant’s reserves as well as the calendar, and a common practice is to leave a field unpruned through a difficult year and take the yield decline rather than risk the loss. Where irrigation exists the window widens considerably, which is one of several ways irrigation changes more than water supply. The other timing consideration is what the prunings are used for. In most systems they are left in the field or spread between rows rather than removed, because a hard prune produces a substantial quantity of leafy material that returns organic matter and nutrients to a soil that has been exporting both with every harvest. Removing prunings for fuel or fodder is common where those are scarce, and it is a slow drain on the field.
Collar pruning and rejuvenation
When a field has aged past what ordinary pruning can fix — a congested frame full of dead wood, low yield, patchy stand — the remaining options are collar pruning or replanting. Collar pruning removes the bush almost to ground level and lets it rebuild an entirely new frame, which takes two or three years to come back into bearing and does not always succeed: weak or diseased plants die instead of regenerating. It is much cheaper than replanting and it does nothing about the genetics of the field, so it postpones the replanting decision rather than answering it. Whole regions have deferred that decision for a generation this way. It is worth stating without disapproval. A grower choosing two years of reduced income over five is making a rational decision with the capital available to them, and the alternative is frequently not replanting but leaving tea altogether. Where replanting does happen at scale it is usually because a subsidy, a long-term buyer relationship or an estate’s own reserves made carrying the gap survivable.
What pruned material does to the tea
The flush that follows a hard prune is vigorous, large-leafed and comparatively coarse, and many producers deliberately do not use it for their finest grades. Later in the cycle, as growth slows, shoots become smaller, denser and slower to develop, which is generally associated with more concentrated character. This is the agronomic version of a familiar tea principle: the material that grows fastest is rarely the material that tastes of the most. It is also the reason estate managers keep pruning records alongside yield records, and why a good buyer will ask which year of the cycle a lot came from. The effect is easiest to hear in categories where the material is not heavily processed, since there is less downstream work to obscure it. In a fine green tea or a first flush the difference between vigorous post-prune growth and slower late-cycle growth is close to the surface. In a heavily oxidised CTC black it is largely absorbed by the process, which is one more reason the two ends of the market ask different questions about the same field.
