Green leaf and made tea: the measurement error that is everywhere

A tea yield can be quoted as green leaf harvested or as finished tea produced, and the two differ by a factor of roughly four. Conflating them is a real and common error that makes yields, prices and picker earnings look like something they are not.

Two units, one word

When a grower says a field yielded so many kilograms, the number can mean either of two things. Green leaf is what the pickers brought in — fresh shoots, weighed at the collection point, mostly water. Made tea is what left the factory: dried, finished, saleable. Because fresh tea leaf is roughly three-quarters water and finished tea is dried down to a few per cent moisture, it takes something in the region of four to five kilograms of green leaf to make one kilogram of made tea, with the exact ratio depending on the plucking standard, the category being produced and how much is lost in sorting. That is not a rounding difference. A figure quoted in the wrong unit is wrong by several hundred per cent, and both units are in ordinary use — pickers are paid on green leaf, factories account in green leaf intake, and yields, exports and national statistics are almost always reported as made tea.

Why the ratio moves

The factor is not a constant, and the things that move it are informative in themselves. A fine plucking standard of bud and first leaf is softer, wetter material with a higher water content, so it takes more green leaf per kilogram of finished tea than a coarse pick does. Categories that lose material in sorting — anything where stem is removed afterwards, or where several grades are separated out — lose more. Withering practice matters, since a long hard wither removes water before the leaf is even processed. And the finished moisture target differs slightly between categories. So a producer’s green-leaf-to-made-tea ratio is a small piece of process information rather than a physical constant, and a factory tracks it because a drifting ratio means something has changed in the intake or in the process. For a reader the useful version is simpler: expect roughly a four-fold difference, expect it to vary, and never assume which unit an unlabelled figure is in.

Where the confusion causes real errors

Three places, repeatedly. Yield per hectare: a figure quoted in green leaf looks like an extraordinary yield when read as made tea, and comparisons between origins go wrong when one source uses each unit. Picker earnings: a daily picking quota expressed in green leaf becomes an absurd figure if read as finished tea, and calculations purporting to show how much tea a picker produces per day frequently make exactly this error. And farm-gate price comparisons: green leaf prices paid to smallholders and made tea prices at auction are not comparable numbers, and setting them side by side to demonstrate that growers receive a tiny share of the value inflates a disparity that is real without help. The last of these matters most, because it appears in advocacy writing where the underlying point is sound. A four-fold arithmetic error in support of a true claim is still an error, and it gives anyone defending the status quo an easy way to dismiss the argument.

What actually drives yield

Yield per hectare is the product of several things, most of which are decided long before a season starts. The cultivar sets a ceiling — plants differ several-fold in productivity, and the high-yielding ones are high-yielding everywhere. Climate sets how many days a year the plant grows at all, which is why a year-round equatorial field outproduces a seasonal one by a wide margin. The position in the pruning cycle matters enormously: the first full year after a hard prune is typically the most productive and yield declines year on year until the next one. Plucking standard is a direct trade — a finer pick takes less material per round. Then fertiliser, water, plant age, stand density and how many bushes are actually alive. Because so many of these move together, single-figure yield comparisons between countries carry much less information than they appear to, and TeaHQ reads a national average yield as a summary of an agricultural system rather than as a fact about a plant.

Yield against quality, honestly

There is a real relationship and it is weaker than the speciality trade implies. The mechanism is growth rate: fast-growing shoots build tissue quickly and are more dilute, slow-growing shoots are denser and more concentrated, and anything that slows growth — cold, altitude, shade, age, low input — tends to lower yield and make the resulting material denser at the same time. That is why high-grown, first-flush and old-bush teas are simultaneously scarce and prized. What does not follow is that low yield causes quality. A field yielding nothing because it is diseased, waterlogged or starved is not producing concentrated tea, it is producing bad tea. Low yield is a symptom that accompanies several of the conditions associated with fine material and also accompanies simple failure, and the two are not distinguishable from the yield figure alone. Anyone selling on the basis of a low yield is inviting a question about which of the two is responsible.

Paying by weight, and what it does to a field

Most hand plucking is paid by weight of green leaf, sometimes above a daily quota, and the incentive that creates is straightforward: take more material, faster. Taking coarser shoots is heavier per shoot; reaching below the plucking table into the maintenance foliage is heavier still. Both add to the day’s total and lower the quality of the intake, and the second damages the plant. This is why plucking standards are supervised rather than merely stated, and why the tension between a weight-based payment system and a quality-based buying system is a permanent feature of estate management rather than a fixable problem. The alternatives all have costs. Paying by time removes the incentive to work fast; paying a quality premium requires assessing every picker’s basket; paying by quota shifts the risk of a bad day onto the picker.
