Shade, and the two completely unrelated reasons it is used

Japanese producers shade tea for a few weeks before harvest to change what is inside the leaf. Agroforestry systems shade tea permanently to change the environment the plant lives in. The two practices share a word and almost nothing else.

One word, two operations

If you read that a tea was shade-grown, that sentence could describe either of two things that have different purposes, different durations, different equipment and different effects on the cup. In Japan, reed screens or synthetic netting go over the bushes for a matter of weeks immediately before the spring harvest and come off as soon as it is finished; the point is a compositional change in the leaf. In much of India, Sri Lanka, Africa and Latin America, trees stand permanently among the tea; the point is a microclimate. Conflating them makes both incomprehensible, and it is why shade-grown as a marketing phrase carries almost no information on its own. The confusion is compounded by a third usage borrowed from coffee, where shade-grown is an established environmental claim about production under a tree canopy. Applied to tea it is comprehensible if the tea comes from an agroforestry system and simply wrong if it is being used to imply a relationship with gyokuro. Both meanings are in circulation, and neither is signposted.

Pre-harvest covering, and what it does to the leaf

Cutting light sharply for the two to four weeks before picking changes what the growing shoot accumulates. The leaf darkens markedly, and its balance shifts towards the amino acids associated with savoury depth and away from the compounds associated with astringency; shading is also associated with higher caffeine in the leaf. That is the entire basis of gyokuro, of kabusecha and of the tencha that becomes matcha, and it is the one production decision that genuinely cannot be reproduced later — a factory can do many things to an unshaded leaf and none of them is shading. It costs yield, stresses the bush and requires structures, which is why shaded teas are priced where they are. The duration is the style. A week or two under light cover gives kabusecha, a middle point between sencha and gyokuro in both character and price. Three weeks or more under progressively heavier cover gives gyokuro when the leaf is rolled, and tencha — the material milled into matcha — when it is left unrolled. Same field, same bushes, same picking window: the shading schedule is what separates the products.

Shade trees in a tea field are doing several jobs at once and none of them is compositional. They moderate leaf and soil temperature during the hottest part of the day, reduce wind, intercept heavy rain before it strikes bare soil, drop litter that feeds soil organic matter, and — where the species chosen is a legume such as an Albizia or an Erythrina — fix nitrogen. They also provide habitat, which is the basis of most biodiversity claims made about tea landscapes. The species used are chosen for a light, high, open canopy that dapples rather than blocks, and for a root habit that does not compete with the tea directly. They are also managed rather than simply present. Shade trees are lopped and thinned on a schedule to keep the canopy at the density the tea wants, and an unmanaged shade stand becomes too dense within a few years and starts costing yield in earnest. Where estates removed shade during twentieth-century intensification, part of the reason was that maintaining it properly is a continuing labour cost with no crop attached to it.

The relationship between permanent shade and yield is genuinely contested and depends on the site. In hot, exposed, drought-prone places shade is generally held to raise yield, by moderating leaf temperature and slowing water loss from a bush that would otherwise shut its stomata through the middle of the day. In cooler or higher places, or where the canopy is too dense, it reduces the light available to a crop that is being grown for its leaves, and yields fall. Twentieth-century intensification removed a great deal of shade in favour of open, heavily fertilised fields; the current direction of travel in several origins is back the other way, on soil and climate grounds. TeaHQ states the mechanism and does not state a figure, because the honest answer varies by site. Shade also cuts both ways on pests and disease. A closed shaded canopy is more humid and less ventilated, which favours the tea mosquito bug and prolongs the leaf wetness that blister blight requires; the same shade suppresses the dry-weather mite complex. So a shade decision is simultaneously a soil decision, a yield decision and a plant protection decision, and optimising for one of them worsens another.

What shade does not do

Permanent shade trees do not produce the compositional effect that pre-harvest covering produces, because they neither cut light hard enough nor do it at the right moment in the shoot’s development. A tea grown under Albizia is not a relative of gyokuro. Equally, pre-harvest covering does nothing for soil, erosion or biodiversity — the netting is over the field for a few weeks a year and the ground beneath it is a conventional, intensively managed monoculture. Each practice is good at the thing it is for, and neither substitutes for the other. There is one point of genuine overlap worth acknowledging. Both practices reduce light, and reduced light does slow growth, so a heavily shaded agroforestry field will produce somewhat slower-grown leaf than an open one beside it. That is a real effect and it is a small fraction of what a pre-harvest cover does over three weeks at the specific moment a spring shoot is developing. Direction shared, magnitude not comparable.

Reading a shade claim

Two questions separate the cases quickly. Was the shade over the bushes for weeks before a specific harvest, or is it there all year? And is it netting and structures, or is it trees? A Japanese tea with a shading claim should be able to say how long the cover was on, because that duration is the difference between kabusecha and gyokuro. A tropical tea with a shade claim is making an environmental statement, which is worth taking seriously on its own terms and should not be read as a statement about the leaf’s composition. A third check is worth adding for the Japanese case, because the terms are regulated in practice by trade convention rather than by law: kabusecha, gyokuro and tencha imply progressively longer and heavier covering, and a producer who cannot or will not say which they made has told you something. Shaded material is expensive enough that vagueness about it is rarely accidental.
