The category that is not finished
Green, white, yellow, oolong and black tea are all complete at the drier. Whatever happens to them afterwards is decline — aromatics fade, the tea goes flat — with the partial exception of teas deliberately made to be kept. Dark tea is built the other way round. Its defining transformation happens after the leaf has already been made into a finished tea, and it is carried out by organisms rather than by machinery. That is what post-fermentation means, and it is a genuine structural exception rather than a matter of degree: no other category has a stage in which the producer’s job is to manage a population of living things. That framing also explains why dark tea sits awkwardly in the six-category scheme. The other five are defined by what happens to the leaf in the day or two after picking; this one is defined by what happens weeks, months or decades later, sometimes in a different building and sometimes in a different country. It is the only category whose defining step can still be in progress on a shelf in somebody’s house.
Wet-piling, in practice

The wo dui process that makes shou pu-erh is straightforward to describe and hard to run. Finished sun-dried maocha is heaped in a large pile, dampened, and covered. Microbial activity raises the temperature inside the heap substantially, and the pile is turned on a schedule to redistribute heat and moisture so the outside and the core transform at similar rates. It runs for weeks. Turning too little produces a core that overheats and sours; turning too often cools it and stalls the process. The technique is comparatively modern, developed in the second half of the twentieth century to produce in weeks a rough approximation of what raw pu-erh takes decades to become. Pile size matters more than it sounds. A large heap holds its heat and runs its own microclimate; a small one loses heat to the room and never reaches the conditions the process needs. That is why wet-piling is difficult to do at small scale and why smaller producers making shou either work with unusually well-insulated piles or send their material to somebody with the volume to do it properly.
The other microbial routes
Wet-piling is not the only one. Fu brick tea cultivates a specific fungus, Eurotium cristatum, in the pressed brick under controlled heat and humidity until golden specks are visible throughout it, and the visible presence of that organism is the grading criterion — one organism, deliberately, rather than a mixed population. Liu Bao has its own regional piling followed by steaming, basket packing and long warehouse ageing that is treated as part of manufacture. And the pickled teas of southern Japan and upland South-East Asia exclude air entirely so that lactic acid bacteria dominate, producing a sour tea unlike anything else in the subject. Set out together, those four routes make the point that post-fermented is a family rather than a process. One cultivates a mixed aerobic population, one a single named fungus, one a regional piling followed by years in a basket, and one excludes air so that bacteria take over. They share only the fact that something living is doing the work, and they produce teas that a blind taster would never group together.
Natural ageing is a fourth thing
Sheng pu-erh is not wet-piled. It is fixed, rolled, sun-dried, pressed and then stored, and whatever happens to it happens slowly in a warehouse over years under conditions nobody is actively managing at a microbial level. TeaHQ records natural ageing as a distinct value from microbial wet-piling for that reason. The two are related — both involve microbial activity on damp compressed leaf — and they are not the same operation at different speeds. A twenty-year-old sheng and a shou made last year are different teas, and anyone who has tasted them side by side knows the difference is not one of degree. Natural ageing also happens to teas nobody would call dark. Pressed white tea changes over years in ways that are clearly not simple decline, and traditionally roasted oolong develops with keeping. TeaHQ therefore records natural ageing as a value available to any tea rather than as a property of one category, which is the modelling decision that stops aged white tea from having to be described as a kind of pu-erh.
Why sun-drying is the precondition
None of this works on leaf that has been finished properly. Machine drying at high temperature denatures residual enzymes and kills surface microorganisms, producing a stable, inert tea; sun-drying at low temperature does neither completely. The maocha that comes out still carries the biological capacity that decades of storage will act on. This is why the sun-drying step is not a picturesque tradition but the load-bearing decision in the whole category, and why a cake pressed from oven-dried maocha will not age however long it is kept and whatever is printed on its wrapper. It is worth noting that this is contested at the margins rather than in principle. Partial machine finishing in wet weather is widespread, and how much high-temperature drying a maocha can take before its ageing potential is compromised is argued about by people who press cakes for a living. What is not argued about is the direction: more heat at drying means less capacity to change later.
What this means for storing it
The practical consequences follow directly and they are the opposite of the advice for every other tea. Dark tea needs some air, because sealing it airtight stops the activity the whole exercise depends on; every other category keeps better sealed. It tolerates and often wants humidity that would ruin a green tea. And it is the only category where the buyer is a participant in the manufacture rather than a consumer of a finished product, which is why storage arguments in pu-erh circles are so heated: the people arguing are arguing about how to finish making the tea. One qualification belongs here, because the advice is often given too enthusiastically. Needing air is not the same as needing a draught, and a cake in a dry, ventilated, air-conditioned room will change very little indeed. What the category wants is stable conditions with some humidity and some slow exchange — which in most climates means a cardboard box in a room nobody heats, rather than any specialist equipment.
