Floral: orchid, jasmine, lilac and the family that covers half the catalogue

Floral is the widest and least precise of the aroma families and it is also the one with the clearest chemistry behind it. A handful of compound groups are consistently associated with it, and the processing step that generates most of them is the one oolong is built around.

What the word is being asked to cover

Floral is the broadest descriptor in ordinary tea vocabulary and it does at least four separate jobs. It names the light, sweet, slightly green fragrance of a lightly oxidised oolong; the intense, unmistakable smell of jasmine in a scented tea; the deeper, heavier, faintly creamy quality conventionally called orchid; and, in a great many descriptions, simply the absence of any other identifiable direction. The last of these is why the word appears so often and conveys so little. TeaHQ keeps `floral` as a coarse filter facet for exactly this reason — a user choosing it wants every floral tea rather than a choice between eleven kinds — and keeps the specific prose alongside, because lilac and jasmine and orchid are three different things and no controlled vocabulary would hold them all. When reading a description, the useful question is not whether floral is accurate but which of the four it is being used for, and the answer is generally visible from what accompanies it. Floral and green together points at a light oolong; floral and creamy at Jin Xuan or a Keemun; floral with nothing else at a writer who had run out of things to say.

The terpene alcohols, and what they are associated with

The compound group most consistently reported in connection with floral character in tea is the monoterpene alcohols, of which linalool and geraniol are the most frequently named, along with the oxidation products of linalool. These are not tea-specific: linalool occurs widely in flowers and aromatic herbs, and geraniol is associated with rose in a great many materials. Nerol, citronellol and 2-phenylethanol — the last of which is associated with rose and honey together — appear in the same discussions. The direction of these associations is well established in the literature and the magnitudes are not something this catalogue reproduces, because published values vary enormously with cultivar, season, processing and analytical method. Two things are worth carrying rather than the names. First, the same compound family is associated with floral character in wine, in hops and in a dozen culinary herbs, which is the mechanical reason a tea can smell of a flower with no flower involved. Second, they are volatile, which places them among the first things any tea loses — so a description of a tea as floral is a description of a fresh tea, and the same leaf two years later will not be one.

Jasmine, indole, and the compound that reads two ways

Jasmine character in tea arrives by two quite different routes and it is worth separating them. In a scented tea it was absorbed: finished green tea is layered with jasmine blossoms that open at night and release their aroma into the leaf, and the aroma in the cup is the flower’s. In an unscented oolong, jasmine-adjacent notes are generated by the leaf’s own processing, and the compounds discussed in that context include the jasmine lactones, methyl jasmonate and cis-jasmone, all of which occur in the flower as well. Indole is the interesting member of the group and the one that most repays knowing about: it is associated with jasmine and white-flower character at low levels and with something distinctly animal, faecal or mothball-like at higher ones, and it is frequently named in accounts of oolong aroma generation. That two-sided behaviour is the clearest available demonstration of the general principle that a compound which dominates a profile at one level can be unnoticeable or unpleasant at another, which is why an inventory of compounds is a starting point and not an explanation.

Orchid, which is a convention rather than a comparison

Orchid is one of the most-used aroma terms in Chinese tea vocabulary and one of the least verifiable in English, because most English-speaking readers have never smelled a fragrant orchid and the ones sold as houseplants are largely scentless. It is applied to Tie Guan Yin, to Keemun, to certain Wuyi teas and to several Dan Cong types, and what it picks out is a heavy, sweet, slightly creamy floral quality quite distinct from the light fresh floral of a high mountain oolong. TeaHQ records it as a trade convention: a whole industry uses it consistently, which makes it reliable as communication whether or not two tasters would have arrived at it independently, and the catalogue keeps `orchid` as an aroma descriptor for that reason. Two consequences follow for a reader. A note of orchid is telling you where in the floral family a tea sits, which is real information, and it is not telling you that the tea resembles any particular flower you could go and smell. And a taster who has never encountered the convention will register something floral and unplaceable, which is not a failure of the palate but an absence of a reference.

Why oolong is where the floral character lives

The processing account is the most useful thing on this page. A large part of the aromatic material in a growing leaf exists in bound form, attached to sugars and carrying no aroma, and it is released by the leaf’s own enzymes when the leaf is withered and bruised. Oolong manufacture consists of repeated gentle bruising of the leaf edges over hours, alternating with rest periods, which gives those enzymes far longer to work than a green tea allows and runs oxidation slowly and unevenly at the same time. The result is a larger and more complex volatile fraction than either a green tea, where the enzymes were destroyed early, or a black tea, where oxidation ran fast and to completion. This is the mechanism behind the reputation of Tie Guan Yin, Dan Cong and high mountain oolong for aroma, and it explains why floral notes are generated rather than preserved. It also explains why the same category can be almost entirely un-floral: a heavily roasted Wuyi tea has covered that first aromatic layer with the products of prolonged heat, and reading roast level alongside oxidation is the only way to place an oolong from its description.

Where floral notes appear outside oolong

In Darjeeling first flush, where light processing preserves a fragile aromatic fraction and the conventional description runs to floral and green together. In a good Keemun, where orchid appears alongside cocoa. In some Chinese and Nepali black teas made from bud-heavy material. In white tea, faintly, alongside hay and melon. In scented teas of every kind, where the flower is the source. And in certain cultivars regardless of category, which is one of the more useful things a cultivar name tells a buyer: the Dan Cong aroma types are a formal classification the Phoenix growers themselves maintain, several of which are floral designations, and the plant material is a real part of what produces them. What floral almost never survives is heavy roasting, milk, or age — the first covers it, the second removes it from perception, and the third loses it. A tea described as floral that no longer smells of anything much has answered a question about its storage, which is the practical use of knowing that this family is the fragile one.
