Altitude, place, and why the same cultivar tastes different somewhere else

High-grown tea is widely associated with aromatic complexity, and the association is real while the explanation is less settled than it sounds. Comparing one cultivar across two places is the cleanest way to see what place actually contributes.

The claim, and how strong it actually is

Across several producing countries, tea grown at higher elevation is associated with greater aromatic complexity, finer texture and a higher price. Sri Lanka classifies its tea by elevation band as a matter of trade practice; Taiwan’s high mountain oolongs command a premium explicitly tied to altitude; Darjeeling, the Nilgiris and several Chinese mountain areas carry similar reputations. The association is well established as a market and sensory fact. What is less well established is that altitude itself is doing the work, and it is worth separating the observation from the explanation, because the two are routinely presented together as though the first proved the second. The elevation vocabulary itself is worth knowing because it is a trade classification rather than a description. Sri Lanka’s high-grown, mid-grown and low-grown bands are commercial categories with conventional boundaries, and they describe different products with different uses rather than a quality ranking — low-grown Ruhuna tea is strong and dark and is bought for that, not as a failed attempt at Nuwara Eliya. Reading an elevation band as a ladder misreads a classification that was never built as one.

Three, and each is plausible. Cooler temperatures slow shoot growth, and slower growth is associated with a different balance in the leaf — more of the amino acid fraction relative to the polyphenols, by the same logic that makes a first flush different from a summer picking. A wide diurnal temperature range, characteristic of high ground, is associated with the same direction. And persistent cloud and mist at altitude reduce direct light, which is the mechanism that deliberate shading exploits, so a mountain field may be receiving a mild natural version of what a gyokuro field receives artificially. All three point the same way, which is why the account is so widely repeated. None of them has been isolated cleanly from the others in field conditions, and TeaHQ presents them as proposed mechanisms rather than as demonstrated ones. A fourth is sometimes offered and deserves more scepticism than it usually receives: that thinner air or lower pressure acts directly on the plant. There is no established account of a mechanism by which that would change leaf composition in the relevant way, and the effects attributed to it are adequately explained by temperature, light and growth rate. High-altitude tea differs from low-altitude tea in several ways that have nothing to do with air. Yields are lower, so the leaf is more valuable, so it is more likely to be hand-picked to a finer standard and processed carefully in small lots by a skilled maker — and plucking standard and processing care are enormous determinants of quality on their own. Different cultivars are planted at different elevations because of cold tolerance. Terrain restricts mechanisation. And the price premium itself changes behaviour, since a producer selling into a high-value market has every reason to make the tea more carefully. Any comparison of a high-grown and a low-grown tea is therefore comparing several things at once, and attributing the whole difference to elevation is the single most common overreach in tea writing about place. There is also a selection effect operating on what reaches a drinker. High-grown tea from famous areas is exported into speciality channels and handled carefully, while low-grown tea moves in bulk through commodity channels, so the two arrive in different conditions before anyone tastes them. A comparison made from what is available in a Western shop is therefore comparing supply chains as well as fields, and the difference attributed to elevation includes everything that happened after picking.

Holding the plant constant: the same cultivar in two places

The cleanest available test, and one a drinker can run. Jin Xuan is grown in Taiwan and also in Thailand, Vietnam and elsewhere, and the teas are recognisably related and clearly not the same. Yabukita is planted across most of Japan and produces noticeably different sencha in Shizuoka and in Kagoshima. Fuding Da Bai material appears well outside Fujian. Assamica-type plants are grown from Assam to Yunnan to Kenya. In each case the cultivar supplies a recognisable through-line — Jin Xuan’s characteristic creamy note travels — while everything around it moves. That is the most useful demonstration available of what place contributes, because the plant genetics are held fixed and the differences that remain are attributable to everything else. The reverse experiment is instructive too: two cultivars grown side by side in one place, made the same way by the same person. Wuyi is the clearest setting for it, where Rou Gui and Shui Xian from the same zone and the same roaster are recognisably different teas, and Taiwanese high mountain production offers the same comparison with Qing Xin against Jin Xuan. Between the two experiments a drinker can separate what the plant contributes from what the place does.

Climate, in the specific sense of the temperature and rainfall pattern across the growing season rather than an annual average. Soil, which affects the plant’s nutrition and is the component most often invoked and least often demonstrated. Altitude and aspect. Light, including cloud cover. The local pest and disease environment, which as the muscatel case shows can be a direct aromatic input. And — decisively and least romantically — the processing culture, since a cultivar grown in Taiwan is usually made into tea by people trained in Taiwanese oolong practice and the same cultivar in Vietnam may be made quite differently. A large share of what gets described as terroir in tea is in fact a difference in what the local industry does with the leaf after it is picked. Soil deserves a specific caveat because it carries most of the romantic weight in this discussion. That soil affects plant nutrition and vigour is not in doubt; that a particular mineral in the ground appears as a mineral note in the cup is a much stronger claim and is not something this catalogue asserts. The mineral character attributed to Wuyi rock tea is a real and repeatable sensory description, and the account of how the geology produces it is an inference rather than a demonstrated mechanism.

How this catalogue handles it

Growing regions are recorded as entities in their own right with their elevation, climate and character described, and teas link to them, so that a reader can see the place claim and the tea claim separately. Cultivar is recorded separately again, and left empty rather than guessed where a producer has not stated it. What the catalogue does not do is assert that a given elevation produces a given flavour, or reduce a region’s character to a soil description. The honest position is that place is real, that its components are entangled, that the processing tradition is a component of place rather than a separate thing, and that the way to learn what any of it means is to hold one variable and taste across the others. The word terroir is used sparingly here for the same reason. It was developed for a different crop in a different regulatory tradition, it bundles together the very components this page is trying to separate, and it carries an implication that place determines quality which the tea evidence does not support. Where it appears in the catalogue it appears as a term other people use, and the underlying components — elevation, climate, plant material, processing tradition — are recorded separately so that a reader can weigh them.
