The frame is built before the crop
Left alone, a young tea plant grows upward on a single dominant stem. That is the last thing a grower wants, because a harvested tea bush needs to be a wide, many-branched frame with a dense flat top that can be picked from standing height for fifty years. So the first years of a plant’s life are spent forcing it to branch: the leader is cut back, the resulting side shoots are cut back in turn, and each cut multiplies the number of growing points. Nothing is harvested during this. The plant is being built, and a grower who takes an early crop from an untrained bush is trading a few kilograms now for a lifetime of a weaker frame. The vocabulary for this stage is formative pruning, and it is worth noticing that it is the same operation as the maintenance pruning an established field receives, applied for the opposite reason: an old bush is cut back to remove accumulated congestion, while a young one is cut back to create branching that does not yet exist. The tool is identical and the intention is reversed.
Bringing the plant down
Alongside cutting back, there are traditional techniques for forcing the frame outward rather than upward. Pegging — bending young stems down and fixing them near horizontal — makes buds along the length of the stem break and grow, filling the space between plants. Centering and formative pruning at successively higher levels achieve the same by removal instead. Which is used varies by origin and by how much labour is available: pegging is slow and effective, formative pruning is fast and slightly cruder. Either way the aim is identical, which is a plant whose energy goes sideways into a wide skeleton instead of upward into one stem. There is a physiological reason both work. A dominant leading shoot suppresses the buds below it, and removing or bending it releases that suppression so those buds break. Every technique in this part of tea cultivation is a way of exploiting that one fact — which is also why a bush left unpruned for a few years reverts towards a single dominant stem rather than staying obligingly flat.
The first light plucking
The first harvest is deliberately light and is as much a training operation as a crop. Taking the tips of shoots at the emerging table encourages further branching at the surface and starts to establish the flat picking plane. Yield in these rounds is small and the material is often good, which creates a temptation growers are warned about constantly: a young field pushed hard in its first bearing years never reaches the yield of one that was allowed to build. Depending on climate, cultivar and altitude, a field commonly comes into meaningful bearing somewhere in its third to fifth year and reaches full yield some years after that. In cool, high or seasonal places it is at the slow end, and at high altitude it can be considerably slower still. Two things extend that timetable further. Poor establishment — a dry first season, heavy weed competition, or a field gap-filled repeatedly — pushes a young block back by years. And an unusually cold or dry year during the formative period is not simply lost growth: it is lost frame, since the branching that would have been built in that season has to be built later or not at all.
The economics of a field that does not pay
For those years the field costs money — weeding, gap filling, pruning labour, sometimes irrigation — and produces close to none. That single fact drives a great deal of behaviour in the tea industry. It is why replanting is deferred far past the point at which agronomists recommend it, why smallholders with no capital buffer rarely replant at all, and why a scheme that offers replanting subsidies is one of the few interventions that reliably changes what growers do. It is also why an ageing planted area is a slow, quiet problem rather than a visible one: nothing dramatic happens, yields simply drift down over decades. The pattern repeats across producing countries: an ageing planted area is reported, replanting rates are calculated and found to be a fraction of what maintaining the stock would require, and the gap persists because no individual grower can carry several years without income on a block that is still producing something. It is a collective problem made out of individually reasonable decisions.
How long a bush lasts
There is no single answer, and the honest version has two parts. A tea plant can live for a very long time — there are productive fields well over a century old, and unpruned trees far older than that — so the limit is not usually the plant’s lifespan. What declines is yield per hectare, as bushes die and are not adequately replaced, as the frame accumulates dead wood and disease, and as an old field’s genetics fall behind what is available. Estates therefore talk about a replanting cycle measured in decades, and the decision to replant is a financial one about whether the yield gain will repay several years of no income. This is also where the old-bush vocabulary of the speciality trade meets ordinary agronomy, and the two do not quite agree. An estate manager describing a field as old is usually describing a yield problem. A speciality buyer describing the same field as old bush is describing material they will pay more for. Both are looking at the same plants and valuing opposite properties of them.
Why any of this reaches the cup
Two things carry through. The first is that a young field and an old field give recognisably different material — young clonal tea tends towards vigour and directness, older stands towards weight and complexity — which is part of what growers mean when they talk about old bush character, though the term is used far more loosely than that. The second is structural: because the establishment period is so long, the composition of the world’s tea fields changes very slowly. What is being drunk now was largely decided by planting decisions taken decades ago, and the cultivars being planted now will define what is available long after everyone who chose them has retired. That is the reason cultivar policy in the major producing countries is treated as a matter of national agricultural planning rather than as a commercial detail, and why the dominance of a single clone over a large planted area — Yabukita across most of Japan is the clearest case — is discussed as a strategic problem as well as an agronomic one.
