Judge a container by four barriers, not by material
Ask of any container: does it stop light, does it limit air exchange, does it stop water vapour, and does it stop odour crossing in either direction. Material is a poor proxy for the answers, because the seal usually decides more than the substance does. A steel tin with a loose single lid stops light completely and stops almost nothing else. A thin foil-laminate pouch, folded and clipped, stops light and odour well and limits air exchange better than the tin — which is why the pouch a tea arrived in is very often the best container in the house, and why transferring a tea into something handsomer is frequently a downgrade. The correct comparison is between specific objects rather than between categories of object, and the test is mechanical: does the closure compress a gasket or fold a barrier film against itself, or does it merely rest. A fifth consideration sits outside the four barriers and decides more purchases than it should, which is whether the container is convenient enough to be used. A brilliant airtight jar that is awkward to open will be left open; a beautiful caddy on the counter will be filled with the tea that gets drunk rather than the tea that needs protecting. Storage that fights the household loses, so the honest question when buying a container is not how well it seals in principle but how it will actually be handled on a weekday morning.
Tins
A double-lid tin — an inner lid that seats snugly inside the body and an outer lid over it — is the classic tea container and is genuinely good. The inner lid does the sealing and the outer lid protects it, and the metal body stops light absolutely and odour almost absolutely. Single-lid tins with a friction fit are much weaker and vary enormously between examples; a tin whose lid drops on without resistance is a light barrier and little else. Painted and lithographed tins are fine provided the interior is unpainted or lined, since a tea will take on the smell of an interior finish. The real advantage of tins over pouches is mechanical: they protect leaf from being crushed, which matters for whole-leaf styles whose appearance and brewing behaviour both depend on the leaf staying intact. Two practical checks distinguish a good tin from a decorative one before purchase. Press the inner lid down and lift the tin by that lid: a well-seated inner lid will hold the tin’s own weight briefly, and a loose one will not. And smell the empty interior, because a tin with a strong smell of its own coating will transfer that to the tea within weeks. Tins that pass both are frequently inexpensive, and tins that fail both are frequently the handsome ones sold specifically as tea caddies.
Foil-lined bags, and what the laminate is
The bag most loose tea is sold in is not foil and not plastic but a laminate of several layers, typically an outer printable film, a very thin aluminium layer and an inner heat-sealable film. The aluminium layer is the working part: it is effectively impermeable to light, to oxygen and to water vapour, which no single-layer plastic film achieves. That is why a resealable laminate pouch outperforms most decorative containers, and why the common instruction to decant tea immediately on arrival is usually wrong. Its weaknesses are the closure and the physical fragility of the layer. A zip closure is a modest barrier compared with the film itself, a folded-and-clipped bag is often better than a zipped one, and a laminate that has been creased repeatedly at the same point can develop pinholes in the aluminium. Pouches also offer no protection at all against crushing. There is also a reason to keep the original pouch beyond its barrier properties: it carries the tea’s identity. Harvest year, origin, cultivar and the seller’s name are printed on it, and a tea decanted into an anonymous tin becomes an unknown within a month. The practical arrangement that solves both problems is to keep the pouch, clipped, inside a tin — the laminate does the sealing, the tin stops the leaf being crushed and excludes light entirely, and the label survives.
Ceramic caddies, and why glass is usually the wrong choice
A glazed ceramic caddy with a well-fitted lid and a gasket is a competent container: opaque, inert, and stable in temperature because of its mass. A glazed caddy with a loose lid is a decorative object that happens to hold tea. Unglazed clay is a special case — porous by design, which makes it wrong for green tea and traditional for aged oolong and pu-erh, where a slow exchange is wanted and the clay’s own character is considered part of the store. Glass fails on the light barrier and fails badly, because the failure is fast and cumulative and the container gives no sign of it. A glass jar inside a closed cupboard is perfectly acceptable, since the cupboard supplies the barrier the glass lacks; a glass jar on an open shelf is the single most common serious storage error in a household that is otherwise trying. The attractiveness of the object is exactly why the error persists. One further point about unglazed clay is worth making because it is frequently romanticised. A clay jar takes on the character of what has been kept in it, which is presented as a virtue and is equally a constraint: a jar used for shou pu-erh is a shou jar thereafter, and putting a sheng cake in it will move that cake towards the ripe character. Collectors therefore dedicate jars to categories rather than rotating them, and regard the vessel as part of the tea’s history rather than as neutral equipment.
Vacuum sealing and nitrogen flushing
Both attack the oxygen vector directly, and both are standard in commercial Japanese green tea, where finished tea is commonly packed with the air evacuated or displaced by nitrogen and then held cold until sale. For a household the calculation is different. Domestic vacuum sealing works well for a tea being put away untouched for months — a spring green tea bought in quantity, for instance — and works poorly as everyday storage, because each opening requires a fresh seal and the machine is rarely to hand. It also crushes leaf: a vacuum bag pulled tight around a fluffy white tea or a twisted oolong will fracture it, which changes how it brews. And it is straightforwardly wrong for anything being aged, where excluding oxygen halts the intended process. Nitrogen flushing has no practical domestic equivalent, which is part of why unopened commercial packaging outperforms anything a kitchen can do. A qualification about vacuum bags is worth adding for anyone who uses one anyway. The crushing problem can be reduced substantially by sealing the tea inside its original laminate pouch and then vacuum-sealing that, or by using the pulse setting rather than a full draw, so that the outer bag holds the atmosphere out without collapsing onto the leaf. It is a workaround rather than a solution, and it is enough to make the method usable for the one case where it genuinely helps, which is a long untouched hold of a spring green tea.
One-way valves, desiccants and oxygen absorbers
The one-way degassing valve on a coffee bag exists because roasted coffee emits carbon dioxide for days after roasting and would otherwise burst its packaging; the valve lets gas out without letting air in. Tea does not degas in that way, so the valve solves a problem tea does not have, and its appearance on a tea bag is generally a packaging decision rather than a functional one. Desiccant sachets are more interesting and more double-edged: they hold a pack dry, which is right for green tea and wrong for anything being aged, where over-drying stalls development. Oxygen absorbers are used commercially and are the same story in stronger form. The general principle is that every one of these accessories is a preservation tool, so each is appropriate exactly where preservation is the goal and inappropriate where cultivation is. Two further accessories deserve a brief mention. Two-way humidity packs, designed to hold a fixed relative humidity rather than simply to dry, are used by some pu-erh storers and are the only member of this family with a plausible role on the ageing side of the rule — though they add a manufactured material to a store that is otherwise deliberately inert, which some collectors object to. And vacuum-insulated caddies solve a problem tea does not have. The general test remains whether the accessory addresses a vector that actually dominates for the tea in question.
Match the container to the amount of tea, not to the shelf
The most under-rated variable is headspace. A hundred grams of tea in a five-hundred-millilitre tin sits in a large reservoir of air that is replaced every time the tin is opened; the same tea in a container it nearly fills does not. This is why decanting into progressively smaller containers as a tea is drunk down is a real technique rather than fussiness, and why buying a matched set of large handsome caddies is a worse arrangement than owning several sizes. The corollary is a purchasing rule: a quantity of tea that will outlast its own good period needs a storage plan before it needs a container, and no container repairs a decision to buy five hundred grams of a green tea that is at its best for four months. The same logic explains why the small sample pouches that speciality sellers use are better storage than they look. A ten-gram portion in a sealed laminate sachet has almost no headspace and is opened once, which is close to the ideal arrangement for a fragile tea; the reason samples so often taste better than the full-size purchase of the same tea is partly this rather than any difference in the leaf. Buying a fragile tea as several small sealed portions instead of one large one reproduces the effect deliberately.
