The shape, and how to recognise it
A tea leaf is simple, undivided, and arranged alternately along the stem rather than in opposing pairs. It is elliptical to lance-shaped, tapering to a point that is often slightly drawn out, and it sits on a short stalk. The margin is serrated for most of its length but not all of it: the serrations stop before reaching the base, so the lower part of the edge is smooth. The leaf is leathery and evergreen, and a plant carries several years of them at once rather than shedding annually. Size varies enormously with the variety group — a small-leaf sinensis leaf may be a few centimetres long, an assamica leaf several times that — which is the single most visible difference between the two and the one that gave them their common names. None of this is unique to tea on its own. It is the combination that identifies the plant, and the most reliable single feature is not on the outline at all but in the veins, which the next section is about.
The veins, which are the identification feature
Run a finger over the underside of a tea leaf and the lateral veins are pronounced. Follow one outward and it does something specific: rather than running straight into a serration at the edge, it curves forward and joins the vein above it, forming a loop inside the margin. The whole leaf is therefore edged by a chain of loops rather than by veins terminating at the rim. Botanists call this brochidodromous venation, and it is the feature field guides use to separate tea from the many plants with a superficially similar leaf. It is also visible in a spent infusion, which makes it the one piece of plant anatomy a drinker can check at the table: unroll a wet leaf, hold it to the light, and the looping veins are there. This is not a quality test and nothing about the loops predicts how a tea tastes. It is an identity test, and identity tests have their uses — a great deal of adulterated and mislabelled botanical material has been detected by nothing more sophisticated than looking at the leaf that came out of the pot.
The underside, the stomata and the down
The two faces of a tea leaf do different jobs. The upper surface is darker, glossier and carries a thicker waxy cuticle; the underside is paler and carries the stomata — the pores through which the leaf takes in carbon dioxide and loses water. Putting the pores underneath is a water-conserving arrangement common in evergreen plants, and it is why a hot dry wind, which strips the boundary layer of still air from the leaf surface, damages tea faster than heat alone does. The underside of a young shoot also carries trichomes: fine unicellular hairs, silvery-white, dense on the bud and the first leaf and progressively sparser on the ones below. The tea trade calls them down, hao or pekoe, and reads their abundance as a quality signal — Bai Hao Yin Zhen is named for them, and Fuding Da Bai is planted because it produces them heavily. The plant grows them for reasons of its own, most plausibly to do with water loss and with deterring small herbivores. Their commercial significance is that they are conspicuous on a young shoot and absent on an old one, so a downy tea is visibly a tea made from young material.
What maturity does to a leaf
A tea leaf changes substantially as it ages on the plant, and the changes all run in the same direction. It thickens, its cuticle hardens, its cell walls lignify, its colour darkens from a translucent yellow-green to a deep matte green, and its down is shed or worn away. Physiologically this is a leaf shifting from being built to being useful: a young shoot is a sink drawing resources from the rest of the plant, and a mature leaf is a source feeding them back. Compositionally the shift is equally consistent — the compounds concentrated in young tissue decline, and structural material increases. For a maker this is the whole basis of a plucking standard. Fine plucking takes leaves that are still in the sink phase; coarse plucking reaches into the source phase. And it is why maturity cannot be corrected downstream: a factory can do a great many things to a leaf, and making it younger is not among them. It also explains an apparent contradiction in the catalogue, which is that some teas specify mature leaf. Nothing about maturity is a fault. It is a specification, and matching it to the process is the skill.
The fish leaf, and the parts nobody counts
At the base of every new shoot, below the leaves anyone counts, there is a small rounded scale-like leaf with a barely serrated margin and no proper stalk. Japanese practice calls it the fish leaf — a translation of a name describing its shape — and Chinese practice has its own term. It is the first structure a bud produces when it breaks, and it is anatomically a transitional form between a bud scale and a true leaf. It matters for a practical reason: plucking standards are frequently expressed relative to it. Breaking a shoot above the fish leaf leaves that leaf on the plant, which is part of how the maintenance layer under the plucking table is kept intact round after round. A picker taught to pick to a standard is being taught, among other things, to recognise it. Below it, the shoot arises from a bud in the axil of a leaf on older wood, and the position of that bud determines where the next shoot will come from after this one is taken. A tea bush is, structurally, an archive of every previous harvest.
Reading the wet leaf as anatomy rather than as a grade
TeaHQ covers reading a wet leaf as a quality exercise elsewhere. Read anatomically instead, the same material answers different questions. Are these whole leaves or fragments — and if fragments, are the pieces from one part of the shoot or from several? Is there a bud, and does it still carry down? Are the leaves uniform in thickness and colour, which suggests a clonal field picked in one round, or visibly various, which suggests a seed population or a mixed intake? Is there stem, and is it green and flexible or brown and woody? None of these tells you whether the tea is good. All of them tell you what was picked, from what kind of field, to what standard — which is information the label usually does not carry and the leaf cannot conceal. There is a limit worth stating. Processing destroys some of this: rolling tears leaves, CTC manufacture destroys the structure entirely, and a heavily oxidised or long-piled tea has leaves too degraded to read confidently. The wet leaf of a lightly processed green or white tea tells you a great deal, and the wet leaf of a CTC black tells you almost nothing.
