Frost, cold and the northern edge of tea

Cold sets the outer boundary of where tea can be grown at all, and a single late frost can remove the most valuable picking of the year from a region that is otherwise perfectly suited to the crop.

What frost does to a shoot

The vulnerable thing is not the bush but the new growth on it. A mature tea plant with hardened leaves survives cold that would destroy a freshly emerged shoot, because the young shoot is soft, full of water and has no protective cuticle worth the name. Frost damage shows within a day or two as blackened, water-soaked shoot tips that then dry and die. The plant will produce a replacement flush, but the timing is lost, and for a region whose entire premium rests on being early — pre-Qingming greens, shincha, first flush — losing the first growth means losing the year’s best-paid crop and picking an ordinary one instead. The damage is also uneven across a field in a way that makes it worse to work with than a total loss. Frost settles where cold air pools, so a hollow may be destroyed while a slope thirty metres away is untouched, and the resulting intake mixes healthy shoots with damaged ones. Sorting that by hand is expensive, and processing it together produces a tea carrying the flat, slightly stewed character of the damaged fraction.

Two different kinds of cold damage

It is worth separating a spring frost from winter injury, because the responses differ. A spring frost strikes actively growing tissue after the plant has broken dormancy, and is a timing problem. Winter injury is slower: repeated freeze and thaw, and above all cold dry wind on frozen ground, desiccate mature leaves that cannot draw replacement water from a frozen root zone. That produces the scorched brown foliage seen on the windward side of bushes in northern fields, and in a severe winter it kills whole plants. Regions at the cold edge design for the second and gamble on the first. The distinction shows in what growers do about each. Winter injury is addressed structurally — cold-tolerant planting material, windbreaks, siting, and mulch banked around the collar — and those measures are installed once and last. Spring frost is addressed operationally, with equipment that has to be run on the night, a forecast that has to be watched, and somebody awake to act on it. One is a capital decision and the other is a shift rota.

How growers respond

The best-known measure is the frost fan: a tall pylon with a propeller that runs on cold still nights, pulling warmer air down from above the temperature inversion and mixing it into the canopy. Ranks of them are a defining feature of the Japanese tea landscape. Sprinkler irrigation is used elsewhere, exploiting the heat released as water freezes onto the leaf to hold it near zero. Cheaper measures include covering, straw mulch banked against the plants, and simply siting fields where cold air drains away rather than in hollows where it pools. Which measures are worth installing is decided by the value of the crop being defended. That calculation is why frost fans are ubiquitous across Japanese tea country and rare in most other origins: Japan’s first flush carries a large enough premium over its later ones to justify permanent installations across a whole growing region, and the fields are flat and regular enough for the equipment to cover them efficiently. Where the spring crop is not worth several times the summer one, nobody builds the pylons.

Tea is grown well beyond the tropics, and the northern origins have a distinct character shaped by the fact that their plants survive winter. Shandong’s Rizhao and Laoshan produce green teas with thick leaves and a marked bean-like sweetness usually attributed to slow, cold-season growth. Georgia’s tea industry in Adjara and Guria depends on cold-tolerant material selected locally. Korea, Turkey’s Black Sea coast and northern Japan all sit in this band. In each, the growing season is short, yields are modest, and winter is a design constraint rather than a background condition. These origins are also where the case for tea as a locally adapted crop is clearest. A plant that has survived several decades of winters in Georgia or Shandong is demonstrably suited to that place in a way no catalogue description can establish, and the surviving stands in those regions are treated by breeders as material rather than as heritage. Cold is a filter that has already been applied.

Hardiness varies considerably between plants, and it is one of the main things breeding programmes in cold origins select for. Small-leaf sinensis material is generally hardier than large-leaf assamica, which is why the northern limit of tea is effectively a sinensis limit. Locally selected populations matter here: Georgian breeding produced cold-adapted selections such as Kolkhida, and Japanese zairai seedling stands survive where some modern clones struggle. This is one of the clearest practical arguments for keeping genetically varied seed-grown populations rather than replacing everything with a single high-yielding clone. Hardiness also trades against other things breeders want. Selections that break dormancy early are commercially valuable because they reach the spring market first, and early budding is exactly what exposes a plant to late frost. So the cultivar that makes the most money in a mild year is frequently the one that loses the most in a cold one, and growers who plant only the early clone have concentrated that risk rather than spread it.

Why this is getting harder rather than easier

A warming climate does not simply move the frost risk northwards. Warmer late winters bring plants out of dormancy earlier, so shoots emerge sooner and are exposed for longer to the late frosts that still occur — which means the damaging combination is a mild February followed by a cold snap in March, not a cold winter as such. Growers in several spring-tea regions report exactly that pattern, and it is one of the mechanisms behind the increasing year-to-year variability in the availability of early spring teas. What can be said is that the variability is discussed by producers in Japan, in Zhejiang and in Darjeeling in similar terms, and that it falls hardest on precisely the teas whose value depends on arriving early.
