What each process does to the leaf

Orthodox manufacture withers the leaf, rolls it — traditionally by hand, now usually in a rolling table or drum that twists and presses without shredding — allows it to oxidise as a largely intact mass, then fires and sorts it. The leaf survives the process recognisably, which is why orthodox tea can be graded by appearance at all. CTC manufacture passes withered leaf between counter-rotating toothed rollers that crush, tear and curl it into small dense granules, macerating the leaf thoroughly and exposing its contents to oxygen all at once. Oxidation then runs quickly and completely through a finely divided material. The machinery is commonly attributed to work in Assam in the 1930s and became dominant across large parts of the world’s black tea production in the decades after. Two processes, two products, and almost no overlap in what they are for. The names are worth unpicking as well. Orthodox simply means the older established method, so it is defined by contrast with what came after rather than by any positive specification, and it covers a wide range of practice from hand rolling to large rolling machines. CTC names the three actions of the machinery. Neither term describes leaf quality, plucking standard or origin, which is why a tea being orthodox tells you about its manufacture and nothing at all about how good it is.
What each is optimised for
Orthodox manufacture preserves difference. Because the leaf is handled gently and oxidation proceeds relatively slowly, the character of the garden, the season, the cultivar and the maker’s decisions all survive into the finished tea, which is why orthodox production supports a market in named, dated, distinguishable lots. CTC manufacture suppresses difference on purpose. Uniform granules oxidised rapidly and completely produce a consistent, strong, deeply coloured, brisk liquor that extracts in seconds, takes milk and sugar well, and can be blended to a specification year after year. That consistency is the product. A buyer purchasing CTC by the container is buying a reproducible cup; a buyer purchasing orthodox tea by the invoice is buying a specific one. Neither is a compromised version of the other. The consistency requirement runs deeper than it first appears. A large blender may be supplying a supermarket brand that must taste identical for years, across crops, weather and shifting supply, and the only way to achieve that is to start from inputs that are themselves highly uniform and then blend across many of them. CTC manufacture is the first stage of that system rather than a separate choice, which is why the process and the blending trade grew together and why the two are difficult to think about separately.

CTC is faster, tolerates coarser plucking and mechanical harvesting, produces a higher yield of saleable tea from a given quantity of leaf, and suits large integrated factories. Orthodox manufacture takes longer, demands a finer plucking standard to be worth doing, produces a lower yield, and needs skilled operators making judgement calls. Those facts, and not any inherent superiority, are why orthodox tea costs more and why the world’s volume moved decisively towards CTC through the second half of the twentieth century. They also explain the geography: CTC dominates in Kenya and across much of the African industry and accounts for the majority of Indian production, while orthodox manufacture remained the norm in China, Taiwan, Japan, Darjeeling, much of Sri Lanka and Nepal. Regions frequently run both, in different factories, for different buyers. There is a labour dimension that follows directly. Because CTC tolerates coarser leaf, it is compatible with mechanical harvesting and with a plucking standard that a skilled hand-plucker is not needed for, whereas orthodox manufacture of any quality depends on a fine pluck and therefore on a large trained workforce. The choice between the two is consequently a choice about employment as much as about product, which is one reason the balance between them is a live political question in several producing countries rather than a purely technical one.
What each tastes like, and why
CTC gives colour, body, briskness and a straightforward malty or tannic character very quickly, with little aromatic complexity and essentially no development across infusions — a fully macerated, completely oxidised, small-particle tea has nothing held in reserve. This is exactly right for a strong mug with milk, for masala chai where the tea must stand up to spices and dairy, and for the sweet, heavily brewed styles of many tea cultures. Orthodox black tea gives aromatics, a slower and more layered arrival, more sweetness, and the distinctions that make a Darjeeling second flush different from an Assam and both different from a Keemun. If you brew a CTC gongfu-style it will simply be strong and then finished; if you brew a fine orthodox tea for four minutes with milk you will have paid for aromatics you then covered up. Milk is the clarifying test. A CTC liquor has the colour, body and briskness to remain recognisable through a substantial addition of milk, which is exactly what it was built for and what a delicate orthodox tea cannot do. Conversely the aromatic fraction that makes a good orthodox tea worth its price is the first thing milk covers. Deciding how the tea will be drunk before buying it therefore settles the process question almost on its own, and it settles it more reliably than any judgement about quality.
The buying consequence
Match the process to the use rather than ranking them. For a milk-and-sugar mug, for chai, for iced tea in quantity and for anything where consistency matters more than character, CTC is the correct product and a good CTC is a genuinely well-made thing. For drinking without milk, for tasting, for multiple infusions and for exploring origin differences, orthodox tea is the only one of the two that can do the job. The failure modes run in both directions: paying a speciality price for a tea that will be drowned in milk, and buying a supermarket CTC in the hope of finding the flavours described on a speciality website. A packet that states its manufacture is telling you which industry it came from, and that single word predicts brewing method better than almost anything else on the label. There is a third failure mode worth naming, which is brewing one as though it were the other. A CTC given three minutes in a pot produces a liquor that is far past where it should have been stopped, and an orthodox whole-leaf tea given the forty seconds that suits a CTC produces almost nothing. Both then get blamed on the tea. Matching the steep to the manufacture is the first adjustment to make with any unfamiliar black tea, and the manufacture is usually evident from the leaf in the packet.
Where the line blurs
Not every black tea is cleanly one or the other. The rotorvane and similar maceration devices are used ahead of conventional oxidation in some factories, producing something between the two. Legg-cut and other cutting methods exist alongside both. Some producers make orthodox and CTC from the same intake, splitting the leaf by quality on arrival. And a growing number of African and Indian producers make orthodox tea specifically for speciality export while running CTC lines for volume, which is why the assumption that Kenyan tea means CTC is now wrong often enough to matter. TeaHQ records the manufacture on the tea rather than inferring it from the country, because the inference used to be safe and is becoming less so every year. The blurring runs the other way as well, in that a great deal of what reaches consumers is a blend of both. A supermarket black tea may contain CTC for colour and strength alongside orthodox material for character, assembled to a specification, and the packet will describe neither. This is one more reason that manufacture belongs on a tea record as a stated property rather than as something inferred, and one more reason that a blend without a stated composition is a product rather than a description.
