Honey, malt, caramel and dried fruit: the sweet aroma families

A tea contains very little sugar, and a great deal of what reads as sweetness is aromatic and arrives through the nose. These four families are the main routes, they overlap chemically, and three of the four are generated by heat.

Aromatic sweetness is not taste

Tea holds only small quantities of simple sugars, so the sweetness a good tea shows is constructed rather than dissolved. Some of it is the soft sweetness of the free amino acid fraction on the tongue. Some is contrast, since reducing bitterness and astringency makes what remains read as sweeter without anything sweet having been added. And a substantial share is aromatic: the honeyed, malty, caramel and dried-fruit qualities of a black tea or an aged white are smelled retronasally and attributed to taste, because the brain assigns volatiles released in the warm mouth to the mouth rather than to the nose. That misattribution is the ordinary condition of eating and drinking and it is why these four families belong on an aroma page rather than under the five tastes. It also has a practical consequence worth knowing: because the perception is aromatic, it responds to everything aroma responds to. A tea that reads sweet hot may read thin cold; a cup drunk without pausing after swallowing loses much of it; and a tea that has lost its aromatics in storage loses its sweetness along with them, which is why a stale tea reads as more astringent than it did without any change to its polyphenols.

Malt, and the family that is best understood

Malt is the conventional descriptor for Assam and for several other fully oxidised black teas, and it is one of the descriptors with the clearest chemistry behind it. The reactions between reducing sugars and amino acids under heat — the Maillard cascade — produce, among a great many other things, a group of short branched aldehydes associated with malty character, and the same compounds are responsible for the malt note in cereals and in brewing. This is why malt is a black tea descriptor rather than a green tea one: the firing that ends black tea manufacture is applied to leaf whose composition has already been transformed by oxidation, and the cascade runs further. It is also a well-established association rather than a trade convention, which distinguishes it from orchid and from mineral. Two qualifications keep it honest. Malt in a cup is a combination rather than one compound’s signature, arriving alongside the body and colour that the oxidation products supply. And the same word is used loosely by writers to mean simply a robust, grainy, satisfying black tea, which is a broader use worth noticing when reading a description.

Caramel, toffee and the roasted sweet notes

Caramel character comes from the same territory as malt and from a further route alongside it: caramelisation, the browning of sugars alone at higher temperatures, which produces its own set of compounds including furan derivatives associated with caramel and burnt-sugar sweetness. In tea this is overwhelmingly the signature of roasting rather than of firing. Hojicha, made by roasting bancha or kukicha at high heat, is the clearest example, and roasted oolong, roasted Taiwanese teas and heavily fired Chinese greens sit along the same axis at different intensities. What is worth understanding is that these compounds are created rather than concentrated: a roasted tea has a genuinely different aromatic inventory from the same leaf unroasted, not a stronger version of the same one. This is also the point at which the amino acid pool becomes a shared resource between two parts of the catalogue, because the free amino acids associated with umami in an unroasted green tea are consumed as substrate when the leaf is roasted. It is a real exchange rather than a loss, and it explains why heavily roasted teas read as sweet in a caramel-and-malt idiom rather than in the broth idiom of a shaded green.

Honey, which arrives by more than one route

Honey is among the most-used descriptors in tea and among the least specific, because honey itself varies enormously and because the note arrives in several unrelated categories. In black teas it is usually discussed alongside 2-phenylethanol and related compounds associated with rose and honey together, which places it adjacent to the floral family rather than to the roasted one. In Oriental Beauty and in some bug-bitten teas the honeyed quality is associated with the same insect-damage mechanism that produces muscatel. In aged white tea it develops slowly over years alongside date and dried fruit and belongs to the storage family. And in some high-bud black teas it is associated with the bud material itself. For a reader the useful move is to read what accompanies it: honey with floral points one way, honey with dried fruit another, and honey with roast a third, and the three are not the same note.

Dried fruit, and why aged teas converge on it

Raisin, date, prune, dried longan and jujube form a coherent group that appears in aged white tea, in old sheng, in traditionally roasted and long-kept oolong and in some heavily oxidised black teas. Categories with quite different starting points and quite different processing arrive at overlapping vocabulary, which is worth explaining rather than glossing over. Part of the convergence is the same slow non-enzymatic chemistry running in all of them during long storage; part is that the fragile, bright, light compounds have left in every case, so what remains is the heavier persistent fraction; and part is that the descriptive vocabulary available in English for these qualities is small, so different teas get the same words. The last of those is not a trivial point. It means the convergence in tasting notes overstates the convergence in the cup, and two aged teas described identically may be recognisably different in a side-by-side. Where this catalogue records dried-fruit notes it records them as commonly described, and the hedge is doing real work.

How to tell aromatic sweetness from the other kinds

Three checks, none of which needs equipment. Pinch your nose and take a sip: what remains is taste proper, and a tea whose sweetness disappears was reporting aroma. Compare hot and cool, since the aromatic component changes with temperature while the amino acid sweetness is more stable, and bitterness generally recedes as a cup cools which makes the contrast component visible. And attend to what happens after swallowing, because sweetness that arrives after the liquid has gone — the returning sweetness Chinese tea vocabulary names directly — is a sequence rather than a level and is invisible to anyone who does not pause. Running the three on one cup takes two minutes and separates the four sources of sweetness in tea more effectively than any amount of reading. It also settles a practical question that comes up constantly, which is why a tea that seemed sweet in a shop tastes flat at home: a warm room, a small cup, an attentive taster and a fresh pour deliver the aromatic component in full, and a mug carried to a desk does not.
