Where a tea’s aroma comes from
The aroma of a finished tea has three sources. Some compounds are present in the fresh leaf and survive. Some are created during processing — the roasted, malty and caramel notes of firing and oxidation are made rather than revealed. And a large group sits in the fresh leaf in a bound, non-volatile form and is released during withering, bruising and oxidation, which is why an oolong smells of flowers that the living leaf does not. The plant’s contribution is to the first and third of those. A cultivar with an unusual complement of these precursors gives a maker something to work with that no technique can substitute for, and a cultivar without it cannot be processed into having it. That is the whole basis of aroma breeding, and it is why the resulting cultivars are so often described in terms of a specific smell — cherry leaf, muscat, cassia, milk, mint — rather than in the general vocabulary of quality.
The Japanese fragrance group
Japan’s aroma cultivars are the clearest case of deliberate intent, because they were bred against a specific structural problem. When one cultivar occupies most of a country’s planted area, an individual grower has almost nothing to distinguish their tea with, and a plant that smells different is the cheapest available answer. Koshun, Sofu, Fushun and Seimei belong to this group; Shizu 7132 arrived at the same place by a different route, as an unnamed station selection kept alive by small growers for its cherry-leaf note. All of them share a practical constraint: the aroma they were selected for is delicate, and the deep steaming that dominates modern Japanese green-tea manufacture buries it. A grower who plants one and then processes it like a commodity sencha has wasted the plant. This is the general shape of the aroma-cultivar bargain — the plant offers something, and it can only be collected by processing that is willing to be gentler and therefore less forgiving.
The Fujian crosses
Fujian’s answer to the same problem was a series of crosses involving the Tie Guan Yin cultivar and other Anxi and Wuyi material, producing Jin Guan Yin, Huang Guan Yin, Jin Mu Dan and their relatives. The intent is visible in the outcome: these plants carry a pronounced floral aroma of the Guan Yin type while being substantially easier to grow than Tie Guan Yin itself, which is low-yielding and difficult. They are planted in Anxi, in Wuyi and well beyond, and they are used both for teas sold under their own names and for teas sold under the famous name they resemble. That dual use is worth naming plainly. A cultivar bred to give the aroma of an expensive tea at lower cost will be used honestly to make a good cheaper tea and dishonestly to imitate an expensive one, and the same plant serves both purposes. TeaHQ records them as legitimate cultivars with their own character rather than as substitutes, because that is what they are.
Dan Cong, where aroma is the classification system
The Phoenix mountains in Guangdong took the idea further than anywhere else: the entire local classification of tea plants is by aroma. Mi Lan Xiang is honey-orchid fragrance, Ya Shi Xiang duck-dung fragrance, Xing Ren Xiang almond, Zhi Lan Xiang orchid, Gui Hua Xiang osmanthus, You Hua Xiang pomelo flower, Jiang Hua Xiang ginger flower. These are not tasting notes applied to a finished tea; they are the names of the plants, assigned on the basis of the aroma the material gives and propagated from designated mother trees. It is a folk taxonomy of smell, developed by growers over generations, and it predates any laboratory. Two cautions come with it. The names are a Chaozhou vocabulary built from Chaozhou reference plants, so several of them are difficult to calibrate for anyone who has not smelled the flower in question. And an aroma-type name is no assurance of aroma: a poorly made Dan Cong of any type smells of very little.
The cultivars whose aroma nobody expects
Two Taiwanese plants make the point better than any argument. Jin Xuan gives a creamy, milky note that arrives with no additive and no special processing, which is why the tea sells under its cultivar name and why milk oolong exists as a category — including, unhelpfully, flavoured versions that imitate what the plant does for free. Hong Yu, the black-tea cultivar bred from a cross involving Burmese assamica and indigenous Taiwanese material, gives a menthol-and-cinnamon aroma that new drinkers routinely assume must be flavouring. Neither aroma can be produced by processing a different plant. This is as close as tea offers to a controlled demonstration that cultivar matters, and it is worth holding on to because the general claim — that the plant affects the cup — is usually made in a form too vague to test. Here the effect is specific, repeatable, unmistakable, and attached to a named plant.
What an aroma-cultivar claim is worth
More than most cultivar claims, because it is partly self-verifying. If a tea sold as Jin Xuan has no creamy note, or a Hong Yu no menthol note, something is wrong — the plant is not what it says, or the material was poor, or the tea has been sitting too long. That is a rare thing in tea: a claim on a label that the drinker can partially check. The limits are real. Aroma varies with season, altitude, picking standard and age, and a genuine example can be muted; a flavoured tea can imitate a cultivar note convincingly; and most cultivars have no signature this distinctive, so the check does not generalise. But for the small group of plants bred or selected for a specific smell, the cultivar name is doing more work than almost any other claim on the packet, and it is worth paying attention to when it appears.
