Why powder is a different problem from leaf
A rolled or twisted tea leaf is a folded, largely intact piece of plant tissue: most of its mass is interior, shielded from the air by the material around it. Stone-milling tencha into matcha destroys that arrangement completely, producing particles of a few micrometres across whose entire mass is effectively surface. Every degradation vector accelerates in proportion. Oxidation runs faster because there is more exposed area for oxygen to act on. Aromatics disperse faster for the same reason. Moisture is absorbed faster and causes clumping as well as chemical harm. Odour is taken up faster. And light acts on a much greater fraction of the material at once. Matcha is not a delicate tea being treated carelessly; it is a normal tea in a physical form that has no defences, and the storage advice follows from geometry rather than from any special chemistry. The stone-milling process itself is part of the reason matcha reaches the buyer in good condition at all. Traditional granite mills turn slowly and produce a fine powder without generating much heat, and heat during grinding would accelerate exactly the changes storage is trying to slow. This is one of the substantive differences behind the price gap between stone-milled matcha and cheaper machine-ground powder, and it is a manufacturing fact rather than a marketing one.
The colour tells you before the taste does
Fresh, well-made matcha is a vivid, slightly luminous green, and it dulls towards a flat khaki or yellowish-green as it oxidises. This is unusually convenient: it is the only common tea whose condition can be judged reliably by eye before brewing. A useful habit is to note the colour when a tin is first opened, because the comparison that matters is against the same tea rather than against a photograph. Aroma tracks it — fresh matcha smells sweet, marine and grassy, and tired matcha smells faintly of hay and little else — and the cup follows last, losing the umami sweetness and leaving bitterness and a chalkier texture more exposed. When someone says they do not enjoy matcha, oxidised matcha whisked from a tin that has been open for months is one of the commonest explanations, and it is a different drink from the same tea fresh. Colour also has to be read against the tea’s own starting point rather than against an ideal. Matcha made from later-picked or less thoroughly shaded leaf is duller when new, so a yellowish powder is not necessarily an old one — it may be a cooking-grade product behaving exactly as expected. This is why the comparison that matters is against the same tin when it was opened, and why noting the colour on day one is a habit worth forming rather than an unnecessary ceremony.
Unopened and opened are two different products
Unopened matcha in commercial packaging is usually in a sealed tin or a nitrogen-flushed sachet and is genuinely stable for months, which is why refrigerated or frozen unopened matcha is a normal part of the Japanese supply chain. Once the seal is broken, the tin contains air, and every use replaces it. The practical horizon after opening is weeks rather than months for anything intended to be drunk as usucha or koicha — this is the most expensive fact in domestic tea storage, because matcha is bought by the small tin at a high price per gram and the temptation to eke it out over a season is strong. The right response is at the point of purchase: buy a size that will be used within about a month, even though the larger tin is better value per gram, because value per gram is not the operative measure for a product that fades. The arithmetic is worth doing explicitly, because it usually surprises people. A single bowl of usucha uses a couple of grams, so a thirty-gram tin is roughly a fortnight of daily drinking and a hundred-gram tin is several months. For anyone drinking matcha occasionally rather than daily, the smallest tin available is very often the correct purchase even at a substantially higher price per gram, and the larger tin is a false economy that will be half-oxidised before it is half-finished.
The tin, the sachet and the natsume
Commercial matcha tins are small, opaque, and close tightly, and they are the right container — there is little to improve on and nothing to be gained by decanting. Sachets, particularly nitrogen-flushed ones, are better still until opened and worse afterwards, since a folded sachet seals poorly; decanting an opened sachet into a small airtight tin is sensible. The natsume, the lacquered tea caddy of the Japanese tea ceremony, is a serving vessel rather than a storage vessel: it holds the small quantity being used in a session and is refilled from the tin, and storing a month’s matcha in one is a misreading of the object. Whatever the container, keep the headspace small, keep it closed between whisks rather than open through a session, and keep a dry spoon out of it — introducing moisture with a damp chashaku is a common and avoidable error. One further detail about handling: matcha is fine enough to become airborne, so a tin opened and closed briskly loses a small amount each time and coats its own rim, which then stops it sealing properly. Wiping the rim occasionally with a dry cloth is worth doing, and it is the kind of small maintenance that separates a tin that seals for a month from one that has been sealing badly for three weeks without anyone noticing.
Cold storage, with the condensation rule enforced
Everything said about refrigerating green tea applies to matcha with the consequences sharpened. Cold slows the oxidation that is matcha’s principal enemy, and condensation on a powder is worse than condensation on leaf because a powder clumps, takes up water across its whole surface at once, and cannot be dried out again. So the rule is absolute rather than advisory: a matcha tin taken from a refrigerator or freezer must come fully to room temperature, still sealed, before it is opened, and for a small tin that means an hour or more rather than a few minutes. Given how difficult that is to sustain for a tea drunk daily, the honest recommendation for most households is not to refrigerate the tin in use at all, and instead to keep the unopened spare cold and the working tin at room temperature. There is one further reason to keep the working tin at room temperature that has nothing to do with chemistry. Matcha that is cold whisks differently, and a bowl made with powder straight from the refrigerator into hot water behaves inconsistently. Since the ritual is short and the margin for error small, removing a variable is worth something in itself — which is a small point compared with the condensation problem and points in the same direction.
Sifting, clumping and what they indicate
Matcha clumps because static and fine particle size make it cohesive, and a certain amount of clumping is normal in fresh powder — this is why a sieve is standard equipment and why sifting immediately before whisking gives a better suspension. Clumping that has become hard, granular or crusty is different and indicates absorbed moisture, which is a storage failure rather than a handling one. Powder that has taken up water will also whisk poorly no matter how it is sieved, and will taste dull. A related tell is the smell on opening: matcha stored beside anything aromatic picks the aroma up almost immediately, and unlike leaf tea there is no delay to give warning. The tin belongs somewhere no other strong smell reaches. It is worth adding that sifting does nothing for storage and everything for preparation. Matcha sifted and then left in a bowl is more exposed than matcha in a tin, so the sieve belongs immediately before whisking rather than as a batch operation done in advance. Some households sift a session’s worth into a natsume, which is the traditional arrangement and is fine over the hours of a gathering; sifting a week’s supply into an open container is not.
What to do with matcha that has gone past drinking
Oxidised matcha is not wasted material, it is a different ingredient. It remains perfectly good for cooking and baking, where sugar, dairy and heat dominate the result and the loss of delicate aromatics does not register — which is precisely the reason a large secondary market for lower grades exists in the first place. It also works in iced and blended drinks for the same reason. What it does not do is make good usucha, and no whisking technique compensates. Recognising the transition early rather than persisting with a declining tin is the practical skill, and the colour check makes it easy. The purchasing lesson is the one that runs through every storage page in this catalogue: for the fragile categories, quantity is the decision that determines quality, and it is made in the shop rather than in the cupboard. There is a final and slightly uncomfortable implication for how matcha is sold. Because the product declines so quickly after opening, the tin size a seller offers is a decision about the customer’s experience as much as about price, and a shop that only sells large tins is optimising for value per gram rather than for what will be in the bowl in six weeks. Sellers who offer small sizes, and who state the harvest and the milling, are making the more expensive choice on the buyer’s behalf.
