What storage is actually maintaining
A sheng pu-erh cake left to age is not sitting inert. Slow non-enzymatic oxidation is converting its catechins into larger compounds, which is what softens the bitterness and darkens the liquor. Residual enzyme activity from low-temperature sun-drying continues at a low level. And a microbial population on the leaf remains present and active at a rate that depends heavily on how much water is available to it. Storage is the business of keeping all three going gently and in balance. Too dry and everything stalls, leaving a tea that is merely old. Too wet and the microbial side runs ahead of the rest, which is how a cake acquires the flat, sour, cellar character that collectors call wet-stored in the pejorative sense. The target is not a number, it is a rate — slow enough to be gradual, fast enough to be a process. Ripe pu-erh and the other hei cha sit differently on the same axis. Wet piling did much of the conversion in weeks before the tea was ever sold, so what remains to happen in storage is slower and less dramatic, and the tea is correspondingly more forgiving of imperfect conditions. It still wants stability and still should not be sealed, and it still absorbs odour. But a beginner storing shou is unlikely to ruin it, which makes it the sensible category on which to learn the practice before committing to a sheng cake for fifteen years.
Humidity: a band, and where the band comes from
The figures circulated among collectors for domestic storage sit broadly in the region of sixty to seventy-five per cent relative humidity, with the low end favoured by those who want a slow clean development and the high end by those who want visible progress in a decade. TeaHQ reports those as conventions rather than as measured optima, because they are: they come from the accumulated practice of Hong Kong, Guangdong, Taiwanese and more recently Western collectors comparing outcomes, not from controlled trials, and no authority sets them. What is well established is the direction. Below roughly the middle of that band, development slows markedly and aromatics are preferentially lost, producing a dry, thin, faded cake. Above the top of it, the risk of mould rises steeply and the character shifts. Anyone storing seriously buys a hygrometer, because the reading in a given room is not guessable and is the only variable here that can be measured cheaply. Temperature matters alongside humidity and is discussed far less. Warmth accelerates the same processes, so a warm humid store converts fast and a cool dry one barely at all, and the two variables have to be considered together rather than separately. What collectors generally want is a room that does not swing, since a store cycling between conditions is repeatedly wetting and drying the leaf. Stability is worth more than any particular reading, which is why the first thing to buy is an instrument rather than a humidifier.
Airflow: less than people think, more than none
The instruction that pu-erh must breathe is correct and routinely over-interpreted. What the tea needs is a slow exchange with a stable room — enough that oxygen is replenished and that the leaf is not sealed into its own accumulated volatiles — and not a current of moving air, which dries and strips it. In practice a cake in its cotton-paper wrapper, inside a cardboard carton, in a cupboard, is receiving the right amount. A cake on an open shelf in a draughty room is receiving too much and will fade. A cake in a zip-lock bag is receiving none. The other function of enclosure is aroma retention: a tong of cakes stored together in their bamboo leaf wrapper holds its own atmosphere, and collectors generally consider that mass effect real — a larger quantity of tea stored together develops better than a single cake in the same room. There is a corollary about quantity that surprises people. A single cake in a large room is in a much less favourable position than the same cake in a small enclosure with other cakes, because a small volume of air surrounded by tea reaches its own equilibrium and stays there. This is the practical reason collectors advise buying a tong rather than a cake if the intention is genuinely to age something, and it is one of the few pieces of collector folklore with a mechanism behind it that anyone can state.
Dry storage and wet storage
The two named traditions. Dry storage — associated with Kunming, with northern Chinese cities and with Taiwan at its drier end — means low humidity, slow development, and a cake that after twenty years is still recognisably the tea it was, with the bitterness softened and the aromatics preserved. Traditional wet storage, associated with Hong Kong and Guangdong warehouses, means higher humidity and warmth, sometimes actively managed, producing much faster conversion, a darker liquor and the distinctive earthy, camphorous, cellar-adjacent profile that older Hong Kong-stored cakes are known for. Between them sit a range of intermediate practices. It is worth being precise that wet storage in the traditional sense is a controlled warehouse craft with practitioners and reputations, and is not the same thing as a cake that got damp in a cupboard, although the vocabulary is used for both. There is also a middle practice that has become common and is worth naming, sometimes described as natural or ambient storage: a tea kept in a subtropical climate without active management, which lands somewhere between the two named traditions depending on the year. A great deal of what is sold today as traditionally stored is this rather than the warehouse craft, and the terminology does not distinguish them. A buyer asking about storage should ask what was actually done rather than which label the seller prefers.
Why the argument is not settled
Three reasons, and none of them is going away. The first is that the dispute is largely about preference: dry storage is favoured by those who value clarity and retained aroma, wet storage by those who value depth, sweetness and a mature body sooner. Those are aesthetic positions, and no amount of evidence adjudicates between them. The second is that the experiment is nearly impossible to run — comparing storage properly means the same cake, split, stored two ways, for twenty years, with everything else held constant, and the number of such comparisons that exist and are documented is very small. The third is commercial: storage history is a large part of the price of an aged cake, sellers describe their own storage in favourable terms, and there is no verification. TeaHQ therefore records both traditions and declines to rank them, and regards any confident general claim that one produces better tea as an opinion held by someone with a position. A fourth factor is that the two traditions are associated with different generations of buyer and different markets, so the argument carries cultural weight beyond the tea. Older Hong Kong and Cantonese drinking culture is built around teas that were stored warm and humid, and much of the Western and mainland collecting boom favours dry storage and the clarity it preserves. Preferences formed on one kind of tea will describe the other as a fault, which is worth recognising in any confident account of the question, including the confident accounts on either side.
Practical domestic storage
For most people in temperate climates the problem is too little humidity rather than too much, and the standard solution is an enclosed volume that buffers the room: a cabinet, a sealed plastic tub with the tea inside a carton, or a purpose-adapted wine cooler, with a hygrometer inside and something to add or absorb moisture as needed. Collectors call this a pumidor and the principle is simply that a small enclosed space is easier to hold steady than a room. Unglazed clay jars are the traditional vessel for loose dark tea and work on the same logic with a slower exchange. Whatever the enclosure, three things matter more than its sophistication: that the tea is not near anything aromatic, that the temperature does not swing, and that it is left alone. Frequent opening to check on progress is the most common self-inflicted problem in domestic ageing. One caution about enclosures is worth stating, because the failure is common and avoidable. A sealed plastic box with tea inside and no monitoring is a container in which humidity can rise steadily with no way for anyone to notice, and mould in an enclosed store is the classic outcome. If an enclosure is used, a hygrometer inside it is not optional, and it should be read occasionally rather than installed and forgotten. The enclosure is doing what a room cannot, which also means it can fail in ways a room would not.
What goes wrong, and what it smells like
Damp is the main failure, and it announces itself: a musty, sour, wet-cardboard smell on the dry leaf, sometimes with visible white bloom, which is not the same as the fine surface frosting sometimes seen on properly aged material and is difficult for a non-expert to tell apart with confidence. Over-drying is the quieter failure — no smell, no visible sign, simply a tea that has lost aromatic intensity and gained nothing. Odour contamination is the third, and it is worse for pu-erh than for anything else precisely because the storage is ventilated by design; a cake stored in a kitchen is being scented by the kitchen. And the fourth is buying rather than storing: an age statement on a wrapper is a claim about a date, not about the twenty years in between, and colour deepens with warm storage in months as readily as with genuine years. Where a cake is suspected of damp, the honest advice is that a household cannot reliably distinguish a stored cake with surface bloom from a spoiled one, and this catalogue will not offer a test that implies otherwise. What it will say is that a musty smell on the dry leaf is a reason to separate that cake from the rest of the store immediately, because whatever conditions produced it are conditions the neighbouring cakes are also in.
