Drying
The final moisture reduction that halts change in the leaf and makes the tea stable enough to keep.
What it is
Every category ends here. Whatever has been done to the leaf — fixed, oxidised, bruised, yellowed — the last step brings its moisture down far enough that nothing much continues to happen, and the tea can be packed and stored. The method is not neutral: hot-air drying is clean and repeatable, sun drying leaves a characteristic note and is what allows sheng pu-erh to keep changing afterwards, and basket or pan finishing contributes its own toasted edge. Under-drying is the single most common defect in home-stored tea, because leaf that holds too much moisture goes stale and musty rather than ageing gracefully.

What it does to the leaf
Reduces residual moisture to a level at which enzymatic, microbial and oxidative change effectively stops, stabilising the leaf for storage.
What it does to the cup
Largely a preserving step, but the method leaves a signature: sun drying gives a distinctive dry-hay note, basket firing a light toast, hot air comparatively little.
Variants that matter
Ways this step is carried out that produce genuinely different results, rather than regional names for the same thing.
- Sun drying (shai qing)
- Used for the maocha destined to become sheng pu-erh. It leaves enough residual activity in the leaf for long-term ageing to be possible, which oven drying does not.
- Hot-air drying
- The industrial standard: fast, controllable and effectively neutral in character.
- Basket or pan finishing
- A gentler, more traditional finish that contributes a small amount of toasted character alongside the drying.
Where this gets misdescribed
Drying is treated as a merely mechanical last step. For dark tea it is the decision that determines whether the tea can age at all: leaf dried too hot and too hard is stable but inert, and will not develop with keeping however long it is stored.
Other steps at the Drying stage
- Basket drying (hong gan) — Drying leaf in a woven basket over a low charcoal or electric heat source rather than in a pan or a hot-air machine.
- Drying the pressed cake — A freshly pressed cake is wet in the middle, and how that moisture is taken out over the following days is one of the least visible and most consequential decisions in dark tea.
- Pulling the old fire (la lao huo) — A final drying method in which a basket of tea is carried over an intense charcoal fire for a second or two at a time, again and again, by a relay of workers.
- Sun-drying (shai qing) — Drying leaf in sunlight rather than in a machine, leaving residual enzyme and microbial activity intact.
- Two-stage drying (mao huo and zu huo) — Drying in two passes with a cooling interval between them, because moisture inside the leaf needs time to migrate to the surface.
