Assam
The archetypal malty black tea, grown on the hot floor of the Brahmaputra valley from native assamica stock rather than the sinensis bushes planted almost everywhere else. Deep, brisk and heavy-bodied, it is the backbone of most breakfast blends and one of the few teas built to be drunk with milk without disappearing.
Character
Thick and malty with a firm astringent grip. The second flush is the one worth seeking: it carries a rounder, almost stewed-fruit sweetness under the malt that the first flush has not yet developed.

Cultivar is the level below the variety group: a named selection of the tea plant, propagated as clones from one parent. Most consumer writing stops at the country and the category, which leaves out the layer that decides how the leaf behaves before anyone picks it.

Large, broad, glossy leaves on a plant that grows to a tree if unpruned. Vigorous, high-yielding, tolerant of heat and humidity and intolerant of frost. Higher in the compounds associated with body and briskness, which suits full oxidation and suits milk.

Assam’s shift from seed-grown gardens to clonal ones is what made single-estate consistency possible, and TV1 is where that shift starts.

High-yielding assamica clone giving a strong, coloury, brisk liquor. Selected for CTC performance rather than for aroma.

Vigorous, high-yielding and comparatively drought-tolerant, giving a full-bodied black tea for CTC and orthodox manufacture.

Large, glossy, drooping leaf on plants that become trees if unpruned, with the vigour and the frost-sensitivity of the variety. Genuinely unmixed indigenous stands are now rare, since a century and a half of open pollination alongside imported stock has done what open pollination does.

Assam-type material giving a variable population, since seed from an open-pollinated garden is never uniform. Its interest is as a record of how planting material moved before clonal propagation.
How it is made, in order
Read top to bottom: the list is the production sequence, and the sequence is what makes this tea its category rather than a neighbouring one. The same leaf from the same bush becomes a green tea or a black tea depending on where the heat falls relative to the bruising, so reordering these steps would not vary the tea — it would produce a different one.
- 1. Withering — Reduces water content, softens the leaf for later handling, and permits early enzymatic and aromatic development.
- 2. Rolling and shaping — Ruptures cell walls to expose leaf juices, and forms the leaf into the shape it will hold through drying and storage.
- 3. Oxidation — Allows polyphenol oxidase to act on leaf polyphenols after cell rupture, converting them into the larger coloured compounds that give oxidised tea its colour and body.
- 4. Drying — Reduces residual moisture to a level at which enzymatic, microbial and oxidative change effectively stops, stabilising the leaf for storage.

- CTC black tea — The orthodox route with one slot filled by a different machine, and every other decision in the route reorganised around what that machine needs.
Where it is practised: Assam, Kenya, Rwanda, Uganda, Malawi, Sri Lanka's low grades, Indonesia, Argentina, and the great majority of Indian domestic production. Nearly every teabag in the world contains tea made this way.
- Orthodox black tea — Rupture first and let the reaction run. Heat arrives only at the very end, to stop something that has already been allowed to finish.
Where it is practised: The whole of the fine black tea trade: Darjeeling, Assam's orthodox lines, Sri Lanka, Nilgiri, Nepal, Kenya's orthodox factories, and the Chinese gongfu black teas of Fujian, Anhui and Yunnan, which run the same shape with markedly gentler settings.

History
Tea was found growing wild in Assam in the 1820s, and its recognition as a distinct variety of Camellia sinensis settled an argument about whether tea could be grown outside China at all. Commercial planting followed within two decades and reshaped the world tea trade in about fifty years.
