Charleston black tea

The one tea grown at scale in the continental United States, on Wadmalaw Island in the South Carolina low country, effectively at sea level. Its defining fact is not a soil or an altitude but a machine. The nineteenth century made repeated attempts to establish tea in the American South and they failed on labour: hand-plucking a tea garden requires many people making a judgement several times a second, and American wages have never permitted it. What survives here survives because the plucking is done by a purpose-built harvester driven over the rows — flat ground, level plucking table, everything above a set height severed and carried off by an air stream. That reverses the usual relationship between a tea and its manufacture. Elsewhere the terrain and the tradition decide how the leaf is picked; here the economics decided the machine, the machine decided the field layout, and the field layout decided the tea. Its significance is historical and demonstrative rather than qualitative, and the record says so.

Seed-grown populationThe plants descend from Dr Charles Shepard's Pinehurst planting of 1888 near Summerville, which grew unattended for decades before being moved to Wadmalaw Island in 1963. That is a documented provenance and it is not a cultivar: it is one nineteenth-century import's descendants, propagated within itself.

How it is made, in order

Read top to bottom: the list is the production sequence, and the sequence is what makes this tea its category rather than a neighbouring one. The same leaf from the same bush becomes a green tea or a black tea depending on where the heat falls relative to the bruising, so reordering these steps would not vary the tea — it would produce a different one.

  1. 1. Mechanical harvestingSevers the upper canopy at a fixed cutting height and conveys the cut material away, harvesting ready and unready shoots together.
  2. 2. Trough witheringDrives conditioned air through a bed of leaf at a controlled rate, bringing the whole batch down to a target moisture level within a scheduled period.
  3. 3. Orthodox processingTwists and presses the leaf to rupture cells without severing it, preserving leaf integrity through oxidation and drying.
  4. 4. Controlled-environment oxidationHolds ruptured leaf at a controlled temperature and near-saturated humidity with enough air movement to supply oxygen and carry away reaction heat, so oxidation proceeds evenly across the whole batch.
  5. 5. DryingReduces residual moisture to a level at which enzymatic, microbial and oxidative change effectively stops, stabilising the leaf for storage.
  6. 6. Sorting and gradingSeparates finished leaf into fractions by size, density, colour and magnetic response, removing stem and foreign matter and producing uniform, tradeable lots.

  • Orthodox black teaRupture first and let the reaction run. Heat arrives only at the very end, to stop something that has already been allowed to finish.

    Where it is practised: The whole of the fine black tea trade: Darjeeling, Assam's orthodox lines, Sri Lanka, Nilgiri, Nepal, Kenya's orthodox factories, and the Chinese gongfu black teas of Fujian, Anhui and Yunnan, which run the same shape with markedly gentler settings.
