Sun-drying vs hot-air drying
The step that decides whether a tea can age. Sun-drying takes moisture out at low temperature and leaves residual enzymatic and microbial activity in the leaf; conventional drying takes the leaf to a temperature at which that activity effectively stops.

Why these get confused
Sun-dried is sometimes read as a rustic or low-technology choice. It is a functional requirement for sheng pu-erh, and a cake made from machine-dried material is not a cheaper version of the same thing — it is a tea that will not age, sold into a market that assumes it will.

The short answer
This is the most consequential drying decision in tea and it is invisible in a fresh cup. A machine-dried maocha and a sun-dried one can taste very similar the week they are made and will be entirely different objects a decade later, which is why the term shai qing appears on cakes intended for keeping.
