Hawaiian tea
Small hand-worked plantings on the windward slopes of Hawai'i Island, established from the late 1990s on young volcanic soil between roughly 400 and 1,200 metres, and the opposite case to Charleston in every respect that matters. Plots are measured in acres, the leaf is hand-plucked and hand-processed, and the same grower will make green, white, oolong and black tea from the same bushes rather than specialising. That last habit is the record's real content, because it is almost unheard of anywhere with a tea tradition. In China, Japan or Taiwan a district's bushes are grown for the style the district makes, and the cultivar, the plucking standard and the equipment all follow from that decision. Here there is no inherited answer to what the leaf is for, so growers try everything on it. What Hawaiian tea offers is therefore not a style but an experiment in progress: a genuinely new terroir, worked by people with no tradition telling them what it is supposed to taste like. Prices are correspondingly high and volumes tiny; this is not a tea anyone encounters by accident.

Sweet, soft and fruity, with a mineral quality drinkers commonly attribute to the young volcanic ground. Lot-to-lot variation is large, which is what a district without a settled style looks like from the outside.

- Varies by producerHawai‘i's tea is grown on a base assembled out of a research programme rather than a tradition. The University of Hawai‘i's CTAHR records a naturalised Assam-hybrid seedling population from the 1960s, seed imported from the Taiwan Agricultural Research Institute, and cuttings of Yabukita, Yutakamidori and Bohea distributed to growers from 1998 — 19 accessions and over a thousand seedlings assessed. Growers plant from that spread, so the island's tea has no defining plant.

Authenticity: Hawaiian-grown and Hawaiian-blended are not the same claim, and the price gap between them is enormous. Ask for the farm and the elevation; a producer working at this scale can answer both.

How it is made, in order
Read top to bottom: the list is the production sequence, and the sequence is what makes this tea its category rather than a neighbouring one. The same leaf from the same bush becomes a green tea or a black tea depending on where the heat falls relative to the bruising, so reordering these steps would not vary the tea — it would produce a different one.
- 1. Hand plucking — Removes selected young shoots at the tender break point, leaving mature leaf and unready shoots on the bush and delivering a uniform, undamaged intake to the factory.
- 2. Withering — Reduces water content, softens the leaf for later handling, and permits early enzymatic and aromatic development.
- 3. Rolling and shaping — Ruptures cell walls to expose leaf juices, and forms the leaf into the shape it will hold through drying and storage.
- 4. Oxidation — Allows polyphenol oxidase to act on leaf polyphenols after cell rupture, converting them into the larger coloured compounds that give oxidised tea its colour and body.
- 5. Drying — Reduces residual moisture to a level at which enzymatic, microbial and oxidative change effectively stops, stabilising the leaf for storage.

- Orthodox black tea — Rupture first and let the reaction run. Heat arrives only at the very end, to stop something that has already been allowed to finish.
Where it is practised: The whole of the fine black tea trade: Darjeeling, Assam's orthodox lines, Sri Lanka, Nilgiri, Nepal, Kenya's orthodox factories, and the Chinese gongfu black teas of Fujian, Anhui and Yunnan, which run the same shape with markedly gentler settings.

- Expecting consistency between lots. There is no district standard here to be consistent with.
- Assuming a high price signals a settled reputation. It reflects acreage, hand-work and American labour costs, and the style is still being found.

- My chai catches on the pan or boils over — A scorched note runs through the finished drink, or the pan foams over the moment your back is turned.
- My chai is harsh and drying rather than rich — The drink is strong enough but unpleasant with it: a rough, drying grip on the tongue and a flat cooked note, rather than the round sweetness a good chai has.
- My chai tastes of hot spiced milk rather than tea — The drink is pleasant and sweet and the tea is nowhere in it — no colour to speak of, no briskness, and nothing that would tell you tea had been involved.
