Ugandan black tea

One of Africa's larger tea crops and one of the least visible, grown along the Albertine Rift below the Rwenzori and sold almost entirely as CTC through the Mombasa auction. What makes it worth a record is the job it does rather than the cup it makes on its own: Ugandan tea is bought by blenders for colour and strength, which means it is valued for the two properties a drinker never consciously chooses and cannot taste separately. A blend that looks the right shade of red through milk very often owes that to leaf grown here, and nothing on the packet will say so. The industry is also unusually young in a country with an old climate for tea — most of the current planting dates from a rebuilding that began in the 1980s after the crop was largely abandoned in the previous decade.

Character

Strong, coloury and short, with a small, plainly malty nose and a great deal of briskness. Judged as a tea to sit with it is unremarkable, and judged as what it is — a component chosen to carry a blend through milk — it is doing something a delicate leaf could not.

The plants it is made from

Cultivar is the level below the variety group: a named selection of the tea plant, propagated as clones from one parent. Most consumer writing stops at the country and the category, which leaves out the layer that decides how the leaf behaves before anyone picks it.

    Genetically varied field by field and bush by bush, deep-rooted from seed, long-lived, and uneven in shoot length and flush timing in a way that makes a fine plucking standard expensive. Much of it is old.

How it is made, in order

Read top to bottom: the list is the production sequence, and the sequence is what makes this tea its category rather than a neighbouring one. The same leaf from the same bush becomes a green tea or a black tea depending on where the heat falls relative to the bruising, so reordering these steps would not vary the tea — it would produce a different one.

  1. 1. Mechanical harvestingSevers the upper canopy at a fixed cutting height and conveys the cut material away, harvesting ready and unready shoots together.
  2. 2. Trough witheringDrives conditioned air through a bed of leaf at a controlled rate, bringing the whole batch down to a target moisture level within a scheduled period.
  3. 3. Rotorvane macerationMacerates withered leaf continuously by forcing it forward past fixed vanes under back pressure, rupturing cells thoroughly and generating heat in the process.
  4. 4. CTC (crush, tear, curl)Comprehensively ruptures and cuts the leaf into uniform granules, maximising surface area and speeding both oxidation and later extraction.
  5. 5. Controlled-environment oxidationHolds ruptured leaf at a controlled temperature and near-saturated humidity with enough air movement to supply oxygen and carry away reaction heat, so oxidation proceeds evenly across the whole batch.
  6. 6. DryingReduces residual moisture to a level at which enzymatic, microbial and oxidative change effectively stops, stabilising the leaf for storage.
  7. 7. Sorting and gradingSeparates finished leaf into fractions by size, density, colour and magnetic response, removing stem and foreign matter and producing uniform, tradeable lots.
  8. 8. Blending to a standardCombines separately manufactured lots in measured proportions against a retained reference sample, producing a batch that matches a fixed profile from variable inputs.

    Where it is practised: Assam, Kenya, Rwanda, Uganda, Malawi, Sri Lanka's low grades, Indonesia, Argentina, and the great majority of Indian domestic production. Nearly every teabag in the world contains tea made this way.

What its chemistry turns on

Every true tea contains caffeine, catechins and amino acids, so listing them would say nothing about this one. What differs is what the processing above does to them — and that is the same list of steps, read for its chemistry instead of its craft.

Brewing

No caffeine estimate is authored for this tea. TeaHQ does not infer one from its category, because category predicts caffeine poorly — matcha and gyokuro carry more than many black teas.

Common mistakes

  • Buying it expecting a single-origin experience. It is a blending tea and the honest way to meet it is beside another one, to see what each contributes.
  • Brewing it long. Everything a CTC granule has is out in three minutes and what arrives after that is only astringency.
