Kangra tea

Tea from a small Himachal Pradesh valley in the western Himalaya, planted in the 1850s and largely wiped out by the 1905 Kangra earthquake. The surviving industry is tiny, and its light, aromatic black tea is closer to Darjeeling than to anything else Indian.

Character

Light and aromatic with a distinct fruit note, and easy to mistake for a modest Darjeeling. Its interest is partly historical: this is what an Indian tea region looks like when an earthquake removes its infrastructure and the market moves on.

The plants it is made from

Cultivar is the level below the variety group: a named selection of the tea plant, propagated as clones from one parent. Most consumer writing stops at the country and the category, which leaves out the layer that decides how the leaf behaves before anyone picks it.

  • Kangra jat Camellia sinensis var. sinensis

    Small-leaf, cold-adapted, low-yielding and highly variable bush to bush. The district makes both green and black tea from it, which is unusual for an Indian origin and is partly a consequence of having no single dominant buyer to standardise for.

How it is made, in order

Read top to bottom: the list is the production sequence, and the sequence is what makes this tea its category rather than a neighbouring one. The same leaf from the same bush becomes a green tea or a black tea depending on where the heat falls relative to the bruising, so reordering these steps would not vary the tea — it would produce a different one.

  1. 1. WitheringReduces water content, softens the leaf for later handling, and permits early enzymatic and aromatic development.
  2. 2. Rolling and shapingRuptures cell walls to expose leaf juices, and forms the leaf into the shape it will hold through drying and storage.
  3. 3. OxidationAllows polyphenol oxidase to act on leaf polyphenols after cell rupture, converting them into the larger coloured compounds that give oxidised tea its colour and body.
  4. 4. DryingReduces residual moisture to a level at which enzymatic, microbial and oxidative change effectively stops, stabilising the leaf for storage.

  • Orthodox black teaRupture first and let the reaction run. Heat arrives only at the very end, to stop something that has already been allowed to finish.

    Where it is practised: The whole of the fine black tea trade: Darjeeling, Assam's orthodox lines, Sri Lanka, Nilgiri, Nepal, Kenya's orthodox factories, and the Chinese gongfu black teas of Fujian, Anhui and Yunnan, which run the same shape with markedly gentler settings.

What its chemistry turns on

Every true tea contains caffeine, catechins and amino acids, so listing them would say nothing about this one. What differs is what the processing above does to them — and that is the same list of steps, read for its chemistry instead of its craft.

History

Planted in Himachal Pradesh from the 1850s with Chinese stock, and largely destroyed by the 1905 Kangra earthquake. The industry never recovered its scale and the district’s tea remains little known despite Darjeeling-like growing conditions.
