Mi Xiang black tea
The fully oxidised member of Taiwan's jassid-bitten family, made mostly in the Hualien and Taitung valleys on the east coast. The insect is the same one that makes Oriental Beauty and Mi Xiang oolong; the manufacture is a straightforward orthodox black tea, so the honey aroma arrives over a soft, low-tannin black base rather than over an oolong. It is Taiwan's second black-tea tradition and has nothing to do with the first: Sun Moon Lake's blacks are defined by an imported assamica cultivar, and this one by an insect that will only feed on unsprayed leaf.
Character
Remarkably soft for a fully oxidised tea — the tannin that would normally carry a black tea is largely absent, so the honey has nothing to fight. Drinkers who dislike black tea for its briskness often like this one and are surprised by it.

Authenticity: Honey character and pesticide-free growing are the same fact here, which is why so much of this tea carries organic certification. A honey note without bitten leaf is a flavouring, and bitten leaf shows as small ragged margins and yellowed tips worth looking for in the dry leaf.

The plants it is made from
Cultivar is the level below the variety group: a named selection of the tea plant, propagated as clones from one parent. Most consumer writing stops at the country and the category, which leaves out the layer that decides how the leaf behaves before anyone picks it.

This is the clearest example in tea of a cultivar chosen for how it responds to an insect rather than for its own flavour.
How it is made, in order
Read top to bottom: the list is the production sequence, and the sequence is what makes this tea its category rather than a neighbouring one. The same leaf from the same bush becomes a green tea or a black tea depending on where the heat falls relative to the bruising, so reordering these steps would not vary the tea — it would produce a different one.
- 1. Leafhopper feeding damage (zhu xian) — Punctures the leaf and stem tissue of a living shoot repeatedly over days or weeks, arresting its growth and inducing the plant's own volatile response in the standing crop, so that the leaf arrives at the factory already chemically altered.
- 2. Withering — Reduces water content, softens the leaf for later handling, and permits early enzymatic and aromatic development.
- 3. Rolling and shaping — Ruptures cell walls to expose leaf juices, and forms the leaf into the shape it will hold through drying and storage.
- 4. Oxidation — Allows polyphenol oxidase to act on leaf polyphenols after cell rupture, converting them into the larger coloured compounds that give oxidised tea its colour and body.
- 5. Drying — Reduces residual moisture to a level at which enzymatic, microbial and oxidative change effectively stops, stabilising the leaf for storage.

The steps above are what happens; this is the named production route they belong to, with the other teas made the same way.
- Jassid-bitten black tea (mi xiang hong cha) — An orthodox black manufacture whose defining condition happens before the pluck: the leaf must have been fed on by the tea green leafhopper, which rules out spraying.
Where it is practised: Taiwan, and by the research station's own account made nowhere else at the time it was developed. Hualien — the Wuhe and Ruisui area — and Taitung are the centres, with production also in Pinglin and Yuchi.

Common mistakes
- Adding milk. The honey aroma is volatile and delicate and milk removes it outright, which is not true of Sun Moon Lake's malty blacks.
- Assuming it is flavoured. The name says honey and the tea tastes of honey, and neither is an additive.
