Drying the pressed cake
A freshly pressed cake is wet in the middle, and how that moisture is taken out over the following days is one of the least visible and most consequential decisions in dark tea.
The categories this step defines
In tea, processing is not a modifier applied to a category — it is what creates the category. These are the types that exist because this step exists.
- Dark tea and pu-erh — Post-fermentation: microbial wet-piling (shou) or extended natural ageing (sheng).
What it is
The steam that made the leaf pliable is still in the cake when it leaves the press, concentrated where the leaf is densest. It has to come out, and the only route is outward through a compressed mass, which is slow. The traditional answer is time: cakes on racks in a shaded, ventilated room for several days to a fortnight, at ambient temperature, sometimes finished in gentle sun. The industrial answer is a heated drying room, which does the job in a day and is the reason a factory can press to a schedule. The argument about the two is the same argument as with sun-drying versus oven-drying maocha, one stage later — heat applied to a young sheng cake is held by many to blunt its capacity to change over decades, and the fastest way to spoil a good cake is a hot dryer. Under-drying is the opposite failure and a worse one in the short run: a cake stored with moisture still in its core grows mould from the inside, and by the time it shows on the surface the tea is gone.

What it does to the leaf
Removes the moisture introduced by steaming from a compressed mass, slowly enough that the interior dries with the exterior rather than being sealed behind a dry shell.
What it does to the cup
Little immediate effect; the consequence is over years. Slow ambient drying is associated with a cake that continues to develop, and hot drying with one that arrives earlier and goes no further.
Variants that matter
Ways this step is carried out that produce genuinely different results, rather than regional names for the same thing.
- Ambient rack drying
- Shaded, ventilated, several days to two weeks. Weather-dependent, and the reason spring pressing seasons are scheduled around humidity.
- Heated drying room
- A conditioned chamber that finishes cakes in a day. Consistent, fast, and the subject of the longest-running disagreement in pu-erh production.
- Sun finishing
- A short period in the open at the end of ambient drying. Traditional, weather-dependent, and easy to overdo on a cake's exposed face.
Where this gets misdescribed
Storage problems in a cake are almost always blamed on the buyer's storage. A cake that was pressed wet and dried too fast carries the fault from the factory, and the mould that appears two years later in a perfectly dry cupboard started in a drying room the buyer never saw.
Other steps at the Drying stage
- Basket drying (hong gan) — Drying leaf in a woven basket over a low charcoal or electric heat source rather than in a pan or a hot-air machine.
- Drying — The final moisture reduction that halts change in the leaf and makes the tea stable enough to keep.
- Pulling the old fire (la lao huo) — A final drying method in which a basket of tea is carried over an intense charcoal fire for a second or two at a time, again and again, by a relay of workers.
- Sun-drying (shai qing) — Drying leaf in sunlight rather than in a machine, leaving residual enzyme and microbial activity intact.
- Two-stage drying (mao huo and zu huo) — Drying in two passes with a cooling interval between them, because moisture inside the leaf needs time to migrate to the surface.
