Keemun
An Anhui black tea invented in the 1870s and now the aromatic centre of most traditional English breakfast blends. Its signature is a smoky-sweet, faintly cocoa-and-pine character sometimes called the Keemun note, which sits somewhere between fruit and woodsmoke without being a smoked tea at all.

Softer and more aromatic than an Indian black, with a cocoa-and-pine sweetness rather than malt. It takes a little milk without collapsing, though it is more interesting without.

The plants it is made from
Cultivar is the level below the variety group: a named selection of the tea plant, propagated as clones from one parent. Most consumer writing stops at the country and the category, which leaves out the layer that decides how the leaf behaves before anyone picks it.
- Camellia sinensis var. sinensis — Camellia sinensis var. sinensis
Small, narrow, serrated leaves on a shrubby bush with good cold tolerance. Slower-growing and lower-yielding than assamica, and associated with more aromatic, less tannic character — which is why it dominates in the categories where aroma matters most.
- Zhu Ye Zhong — Camellia sinensis var. sinensis
Small, thick, dark leaf on plants that vary bush to bush, as any seed population does. Being a population rather than a clone, it flushes unevenly, which is one reason Keemun manufacture is as much about sorting as about oxidising.
How it is made, in order
Read top to bottom: the list is the production sequence, and the sequence is what makes this tea its category rather than a neighbouring one. The same leaf from the same bush becomes a green tea or a black tea depending on where the heat falls relative to the bruising, so reordering these steps would not vary the tea — it would produce a different one.
- 1. Withering — Reduces water content, softens the leaf for later handling, and permits early enzymatic and aromatic development.
- 2. Rolling and shaping — Ruptures cell walls to expose leaf juices, and forms the leaf into the shape it will hold through drying and storage.
- 3. Oxidation — Allows polyphenol oxidase to act on leaf polyphenols after cell rupture, converting them into the larger coloured compounds that give oxidised tea its colour and body.
- 4. Drying — Reduces residual moisture to a level at which enzymatic, microbial and oxidative change effectively stops, stabilising the leaf for storage.

- Orthodox black tea — Rupture first and let the reaction run. Heat arrives only at the very end, to stop something that has already been allowed to finish.
Where it is practised: The whole of the fine black tea trade: Darjeeling, Assam's orthodox lines, Sri Lanka, Nilgiri, Nepal, Kenya's orthodox factories, and the Chinese gongfu black teas of Fujian, Anhui and Yunnan, which run the same shape with markedly gentler settings.

History
Created in Qimen county in 1875 by a former official who had studied black-tea production in Fujian and brought the method to a green-tea area. It was a deliberate commercial invention rather than an evolved tradition, and it succeeded fast enough to become a fixture of English breakfast blends within a generation.
