Huang Jin Ya

A green tea from a yellow-leaf mutant cultivar whose shoots stay golden all season. The chlorophyll deficiency that produces the colour also raises amino-acid content relative to catechins, giving a very sweet, almost bitterness-free cup.

  2. 2. Rolling and shapingRuptures cell walls to expose leaf juices, and forms the leaf into the shape it will hold through drying and storage.
  3. 3. DryingReduces residual moisture to a level at which enzymatic, microbial and oxidative change effectively stops, stabilising the leaf for storage.

    Where it is practised: Practised across almost every Chinese producing province, and in Korea, Vietnam and increasingly in Japanese kamairicha production, where it is the minority method.
