Shizuoka sencha

Sencha from Japan's largest producing prefecture, which is less a single style than two of them. The Makinohara plateau and the Kakegawa area are flat, machine-harvested and deep-steamed, giving the thick, cloudy, forgiving cup most people first meet as Japanese tea; the mountain river valleys inland — Honyama, along the Abe and Warashina — are hand-worked, misted by the rivers and lightly steamed, giving a clear liquor and a sharper aroma. Shizuoka is also where much of the country's tea is finished: aracha grown elsewhere is bought, refined, fired and blended here, so a great deal of Japanese tea passes through the prefecture without being grown in it.

Character

The reference point rather than a departure from it. Where a Kagoshima sencha leans sweet and a Uji sencha leans towards shade-grown depth, Shizuoka's is the balanced middle the other two are described against.

Cultivar is the level below the variety group: a named selection of the tea plant, propagated as clones from one parent. Most consumer writing stops at the country and the category, which leaves out the layer that decides how the leaf behaves before anyone picks it.

    Balanced rather than distinctive: a dependable base for sencha, which is precisely why it was planted so widely.

How it is made, in order

Read top to bottom: the list is the production sequence, and the sequence is what makes this tea its category rather than a neighbouring one. The same leaf from the same bush becomes a green tea or a black tea depending on where the heat falls relative to the bruising, so reordering these steps would not vary the tea — it would produce a different one.

  1. 1. Steaming (Japanese fixation)Denatures polyphenol oxidase using saturated steam, arresting oxidation without applying dry contact heat to the leaf surface.
  2. 2. Rolling and shapingRuptures cell walls to expose leaf juices, and forms the leaf into the shape it will hold through drying and storage.
  3. 3. DryingReduces residual moisture to a level at which enzymatic, microbial and oxidative change effectively stops, stabilising the leaf for storage.
  4. 4. Refining (shiage)Cuts, screens, winnows and de-stems dried crude tea, separating one intake into several distinct commercial products rather than grading a single one.
  5. 5. Final firing (hiire)Reduces refined leaf to storage moisture using hot air, a heated drum or a radiant-fired cylinder, while developing surface browning reactions whose extent the refiner chooses.

    Where it is practised: Almost all Japanese green tea. Also the route for Chinese steamed greens such as Enshi Yu Lu, which use the same fixation and none of the refining tail.

What its chemistry turns on

Every true tea contains caffeine, catechins and amino acids, so listing them would say nothing about this one. What differs is what the processing above does to them — and that is the same list of steps, read for its chemistry instead of its craft.

  • Treating 'Shizuoka' as a style. It is an administrative boundary containing at least two, and the packet rarely says which.
  • Reading a Shizuoka address on a packet as a growing origin. Much of the prefecture's trade is refining and blending leaf brought in from elsewhere.
