Oxidation
The enzymatic browning of ruptured leaf that turns green tea material into black tea material.
The categories this step defines
In tea, processing is not a modifier applied to a category — it is what creates the category. These are the types that exist because this step exists.
- Black tea — Full enzymatic oxidation of the rolled or cut leaf, halted only by firing once oxidation is complete.
What it is
Once the leaf is broken, enzymes held apart from their substrates inside intact cells are free to act on them in the presence of air. The leaf darkens from green through copper to near-black, and its flavour compounds are rebuilt: fresh and vegetal give way to malt, dried fruit, cocoa and the brisk astringency that stands up to milk. Oxidation is managed by temperature, humidity, airflow and above all time, and it is halted whenever the maker judges it complete — fully for black tea, partway for oolong, barely at all for green.

What it does to the leaf
Allows polyphenol oxidase to act on leaf polyphenols after cell rupture, converting them into the larger coloured compounds that give oxidised tea its colour and body.
What it does to the cup
Trades fresh, grassy and marine character for malt, dried fruit, cocoa and a heavier, rounder body.

Ways this step is carried out that produce genuinely different results, rather than regional names for the same thing.
- Full oxidation
- Run to completion for black tea, typically in a humid room over a few hours after rolling.
- Edge oxidation
- Confined to the bruised leaf margin in oolong production, so the centre of the leaf stays green.
Where this gets misdescribed
Oxidation is very widely called 'fermentation', including in translations of Chinese terms that use the same word. It is neither microbial nor anaerobic: nothing is eating the leaf. Real microbial fermentation belongs to dark tea, and calling both by one name is why so many readers believe pu-erh and black tea are made the same way.

- Anaerobic holding (sealed vessel, air displaced) — The oxidation slot, run with the air taken out. Withered leaf is sealed into a vessel from which oxygen has been displaced and held there for hours, and the schedule of holds and airings is the manufacture.
- Controlled-environment oxidation — The room and the equipment in which oxidation is actually run — cool, saturated, ventilated, and judged by nose rather than clock.
- Heaped rest before fixation (dui qing) — A short heaping of the leaf at the end of the shaking cycles, used to push the last of the oxidation quickly before the heat goes on.
- Standing rest between shakes (jing zhi) — The quiet hours between one shaking and the next, which is when oolong actually oxidises — the shaking only decides where.

- Kill-green vs oxidation — Every category of tea is decided at one fork: whether heat arrives before the leaf browns, or after. Kill-green and oxidation are the two branches, and the whole six-category structure follows from where a producer puts that heat.
- Oxidation vs wet piling — The single most consequential conflation in English-language tea writing. Both are called fermentation in casual usage, and only one of them involves micro-organisms at all. Getting this wrong makes black tea and shou pu-erh look like two points on one scale, which they are not.
- Sealed yellowing vs oxidation — Yellow tea is the least-explained of the six categories and the explanation is one step.
