The categories this step defines

In tea, processing is not a modifier applied to a category — it is what creates the category. These are the types that exist because this step exists.

  • Black teaFull enzymatic oxidation of the rolled or cut leaf, halted only by firing once oxidation is complete.

What it is

`process-oxidation` describes what happens to the leaf; this record is about the conditions under which a factory makes it happen reliably. Rolled leaf is spread in shallow beds on racks, on trays or on a slow-moving belt in a room held cool and close to saturation, because the reaction generates its own heat and dries the leaf as it runs. Bed depth is the main lever nobody outside the industry talks about: too deep and the middle of the bed overheats and sours, too shallow and the surface dries and stops changing. The end point is called by the manager on colour and above all on smell, as the sharp green note of freshly rolled leaf gives way to apple, then to a full fruity note, then — if it is left too long — to something dull and slightly sour that no drying will recover.

What it does to the leaf

Holds ruptured leaf at a controlled temperature and near-saturated humidity with enough air movement to supply oxygen and carry away reaction heat, so oxidation proceeds evenly across the whole batch.

What it does to the cup

Even oxidation gives a clean, bright, brisk cup; an overheated or uneven bed gives sourness, dullness and a mixture of under- and over-oxidised leaf in one lot.

Variants that matter

Ways this step is carried out that produce genuinely different results, rather than regional names for the same thing.

Rack and tray oxidation
Leaf in shallow trays on racks, moved by hand. Flexible, labour-heavy, and still standard in orthodox factories making several grades a day.
Continuous belt oxidation
A slow conveyor through a conditioned tunnel, where residence time is set by belt speed. Consistent, and unable to respond to a batch behaving unusually.
Ambient oxidation
No conditioning at all, in climates where the ambient air happens to be close to what is wanted. Common in small operations and unrepeatable across seasons.
Oxidation arrest
The end of the step is not a separate operation: the leaf goes straight into the drier, and the first seconds of drying are what stop the reaction.

Where this gets misdescribed

Oxidation is often described as taking a fixed number of hours, as though it were a setting. It is a reaction whose rate depends on leaf temperature, on how thoroughly the leaf was ruptured, on the cultivar and on the wither that preceded it, and factories at altitude routinely run far longer than factories in hot lowlands for the same result. The clock records what happened; it does not decide it.
