What a drinker notices

Sweet, creamy and softly floral — the register that reads as honeyed rather than as fresh flowers. Prominent in white teas, in well-withered black teas and in Darjeeling.

What this gets credited for, wrongly

The honeyed sweetness of a good white tea is often credited to sugars. Sugars contribute a little; the impression of honey is largely aroma, and this group is a substantial part of it.

What it is

As oxidation proceeds, linalool is converted into a family of oxides that smell noticeably different from their parent: sweeter, creamier, closer to sweet woody and lightly floral than to fresh flowers. Their share relative to free linalool rises with the degree of oxidation, so the ratio between them is a compositional record of how far a tea travelled. It is also the reason a black tea's floral quality is not simply a faded version of an oolong's — the compounds are different, not merely fewer, and describing black tea aroma as 'less floral' misses what actually happened.

Absent from fresh leaf in any quantity. Formed during withering and oxidation from the linalool released alongside them.

What processing does to it

In tea, processing is not a modifier applied to a fixed composition — it is what decides the composition. These are the steps that move this compound, and each links to the step itself.

How brewing brings it out

Extraction rate: Moderate

Less volatile than linalool itself, so they persist in a cooling cup and are often clearest as a tea comes down to drinking temperature.

Across infusions: Persistent across infusions and noticeable in a cup that has stood — a white tea gone cold often smells more honeyed than it did hot.

Water: More water-soluble than the parent terpenoid, which is the point of the pair: the oxides stay in the liquor while linalool itself is partly lost to the steam. Chlorinated water dulls both.

Leaf, ratio and agitation: Because they are the soluble half of the pair, they hold up across a longer steep and a larger volume better than linalool does — an oxidised oolong keeps its floral character in a mug where a fresh green loses it.

Where this gets misdescribed

That white tea is unprocessed. A long wither is a process, and it produces a set of aroma compounds that do not exist in the fresh leaf at all.
