Wintergreen, mint and a medicinal edge, with a cooling impression in the mouth and nose that is more tactile than gustatory. In a first-flush Darjeeling it reads as lift and character; in a black tea from lowland leaf it reads as odd.

How much of it there is matters: Pleasant in trace, and rapidly medicinal above it. It is one of the narrower windows in tea aroma.

What this gets credited for, wrongly

The 'muscatel' of a second-flush Darjeeling is a different phenomenon from the minty lift of a first flush, and the two get discussed as though they were degrees of one thing. They are not.

What it is

Methyl salicylate is what wintergreen smells like, and the tea plant makes it as part of its response to damage and stress. It appears in teas made from stressed leaf — high-altitude first flush, insect-bitten oolong, some Dan Cong — and it is one of the compounds behind the descriptor tasters reach for when they say a Darjeeling first flush smells minty, medicinal or of embrocation. It is a good example of a note that is prized in one context and considered a fault in another, with no change in the compound itself.

Where it occurs in the plant

Low in unstressed leaf and raised by cold, drought, insect damage and mechanical injury. Its presence in a finished tea generally reflects growing conditions rather than a processing decision.

Across infusions: Front-loaded and fading fast; by the third infusion the minty top note has largely gone while the body of the tea has not.

Water: Volatile and lost to standing rather than to water chemistry — the wintergreen note of a fresh Darjeeling is a first-cup phenomenon.
