The compound an entire tea category is named and sold on, and the one thing in that category a drinker cannot taste.
What a drinker notices

Nothing a drinker can find. GABA itself contributes no taste, no texture and no aroma at the amounts these teas carry; the stewed-fruit, tamarind-like character of a GABA oolong belongs to the aroma and polyphenol changes that happen alongside its formation.
What this gets credited for, wrongly
The taste of GABA tea is credited to GABA constantly, in vendor copy and in tasting notes alike. The compound is a marker of a process, and the process is what changed the taste.
What it is
GABA accumulates in tea leaf held without oxygen, and a Japanese technique developed in the 1980s turns that into a production step: fresh leaf is sealed under nitrogen for several hours before the rest of processing continues, and the finished tea carries far more GABA than an ordinary one. The teas made this way — GABA oolong above all, mostly from Taiwan now rather than Japan — have a distinctive stewed-fruit, faintly sour character that drinkers reliably attribute to the compound. It does not come from the compound. It comes from what the anaerobic hold and the heavier oxidation that usually follows it do to everything else in the leaf.
Chemically: Non-protein amino acid formed in the leaf under oxygen-free stress.
Where it occurs in the plant
Present at low level in ordinary leaf and formed rapidly in cut leaf deprived of oxygen. It is a stress response rather than a stored constituent, which is why it is a processing outcome rather than a cultivar or a terroir property.
What processing does to it
In tea, processing is not a modifier applied to a fixed composition — it is what decides the composition. These are the steps that move this compound, and each links to the step itself.
- Oxidation — Creates it
- The anaerobic hold that raises GABA is normally followed by a heavier oxidation than a comparable green-style oolong receives, and that oxidation is where the stewed-fruit character actually comes from. The anaerobic hold itself is carried separately, and the two steps together are what a GABA tea tastes of.
- Anaerobic holding (sealed vessel, air displaced) — Creates it
- The step the category is built on. Withered leaf is sealed into a vessel with the oxygen displaced and held for hours, and the leaf answers that stress by converting free glutamate into this compound. It is a stress response run deliberately, which is why GABA content is a processing outcome and not a property of a cultivar, a garden or a season.

Soluble and out early, as free amino acids are. Since nothing about it is perceptible, no brewing decision is made on its account.
