Linalool
A major floral aroma compound of tea, largely stored bound to sugar in the leaf and set free by processing.
What a drinker notices

Floral and slightly citrus — the register described as lily-of-the-valley, orange blossom or fresh sweet flowers. It is an aroma rather than a taste: most of what a drinker registers arrives through the back of the nose while swallowing, not on the tongue.
How much of it there is matters: Pleasant across a wide range and rarely a fault at tea levels, which is unusual among aroma compounds and is part of why it is so prominent in prized teas.
What this gets credited for, wrongly
Described as 'the floral compound in tea' constantly. It is one of several, and a Dan Cong's orchid, a Tie Guan Yin's lilac and a Darjeeling's floral lift are different proportions of a group rather than different amounts of this one molecule.
What it is
Most of the linalool in a fresh tea leaf cannot be smelled, because it is stored as a glycoside — bound to a sugar and locked away. Processing releases it: withering, bruising and rolling put the leaf's own enzymes in contact with those glycosides and the free, volatile compound appears. That is why a fresh leaf smells of almost nothing recognisable as tea, and why the same leaf smells intensely floral an hour into a wither. Linalool is one of the largest single contributors to floral character in tea and it is not floral character on its own; a tea's floral quality is a proportion between several compounds, and this is one of them.
Chemically: Monoterpene alcohol — one of the most abundant aroma compounds in tea.
Where it occurs in the plant
Present mostly in bound glycosidic form through the leaf, with the free form appearing as processing proceeds. Assam-type plants generally carry more linalool relative to geraniol; China-type plants generally carry the reverse. That varietal split is one of the more useful compositional facts about tea.
What processing does to it
In tea, processing is not a modifier applied to a fixed composition — it is what decides the composition. These are the steps that move this compound, and each links to the step itself.
- Withering — Creates it
- The wither is where bound aroma is set free. Hours of controlled moisture loss let the leaf's enzymes reach the glycosides, and the free compound accumulates. A tea maker judging a wither by smell is judging this.
- Bruising (shaking) — Raises it
- Oolong's repeated bruise-and-rest cycle is a method for releasing bound aroma in stages, and it produces far more free terpenoid than a wither alone. It is why a good oolong is the most fragrant thing in tea.
- Oxidation — Turns it into something else
- Extended oxidation carries linalool onward into its oxides, which smell sweeter and creamier and less sharply floral. A black tea's floral character is therefore not a weaker version of an oolong's — it is a different set of compounds.
How brewing brings it out
Extraction rate: Fast — among the first things out of the leaf
Volatile and only sparingly water-soluble, so hot water both extracts it and drives it out of the cup. That is the whole reason aromatic teas are brewed hot and drunk promptly, and why the aroma of the empty cup is a real assessment tool rather than a ritual.
Across infusions: Strongest in the first infusion and falling steeply. In gongfu practice the lid and the empty cup carry more of it than the liquor does by the third round.
Water: Not much affected by hardness in itself, but a covered vessel matters more than the water does: an open mug loses most of this compound to the room before it reaches the drinker.
Leaf, ratio and agitation: Preheating the vessel raises the immediate aroma sharply by warming the leaf before water arrives — the dry-leaf sniff of a warmed gaiwan is this compound coming off.

- Brew hot and drink promptly
- Use a lidded vessel and smell the lid
- Preheat the pot and smell the warmed dry leaf
- Do not brew aromatic teas cold if aroma is the point
Where this gets misdescribed
That a fresh tea leaf smells of tea. It does not — it smells green. Nearly all of tea's aroma is created or released during processing, and the bound-to-free release of compounds like this one is most of the reason.
