The minor methylxanthine, present in every tea and dominant in none — the reason a tea leaf is not a one-alkaloid plant.

What a drinker notices

  • Bitternessa taste

A contribution to the bitter load rather than a taste of its own. Weight for weight it is less bitter than caffeine, and tea carries far less of it, so no drinker picks it out — it is part of the background against which the identifiable tastes sit.

What this gets credited for, wrongly

Chocolate notes in a Yunnan black or a roasted oolong are aroma compounds, not theobromine. The shared alkaloid is a real chemical kinship with cacao and it is not what the descriptor is describing.

What it is

Tea carries three related alkaloids rather than one, and theobromine is the second of them by amount. It is the compound that dominates cacao, which is why a cup of tea and a bar of dark chocolate are chemically nearer relatives than they taste. In tea it sits well below caffeine and contributes to the bitter load without ever being separable from it by a drinker. Its practical use on this site is corrective: it is why decaffeinated tea is not alkaloid-free, and why 'the caffeine in tea' is a slight simplification of what is actually dissolved.

Chemically: Purine alkaloid — the second methylxanthine of the tea leaf, and the principal one of cacao.

Where it occurs in the plant

Distributed much as caffeine is, weighted towards young leaf and bud, and present at a small fraction of the caffeine amount in Camellia sinensis. Some related Camellia species carry proportionally more of it than C. sinensis does.

What processing does to it

In tea, processing is not a modifier applied to a fixed composition — it is what decides the composition. These are the steps that move this compound, and each links to the step itself.

Like caffeine, largely untouched by oxidation. The alkaloid fraction is one of the few things about a tea leaf that processing leaves broadly alone.

How brewing brings it out

Extraction rate: Fast — among the first things out of the leaf

Less water-soluble than caffeine but out early all the same, and rising with temperature. Anything that moves caffeine in a cup moves theobromine with it, in the same direction.

Across infusions: Front-loaded, on the same schedule as caffeine and for the same reason.

Water: Behaves as caffeine does — barely touched by hardness. Water chemistry changes what a cup tastes like far more than it changes what has dissolved into it.

Leaf, ratio and agitation: Present in far smaller amounts than caffeine and extracting similarly, so it follows the dose without ever becoming the reason for a decision.

  • No brewing change separates the two

Where this gets misdescribed

That decaffeinating a tea removes its alkaloids. Decaffeination targets caffeine; the smaller methylxanthines are reduced along with it but the leaf does not become alkaloid-free, and no producer claims it does.
