What it is
Dark tea is the one category defined by what happens after manufacture rather than during it. Microbial and enzymatic activity continue to work on the finished leaf, either accelerated deliberately by wet-piling or allowed to proceed slowly over years of storage. This is genuine fermentation, and it is not the same process as the enzymatic oxidation that makes black tea black — a distinction popular writing collapses almost universally.

- Steam softening before pressing (zheng ya) — Raises the surface temperature and moisture of dry leaf until it is pliable enough to be compressed and to hold a form, then hands it to the press within seconds.
- Stone pressing — Compresses steamed leaf under a limited, hand-applied load, producing a lower-density cake with more internal void space and a more permeable structure.
- Sun-drying (shai qing) — Reduces moisture to a storable level at low temperature, leaving residual enzymatic and microbial activity in the leaf.
- Turning the pile (fan dui) — Redistributes a fermenting mass to lower its core temperature, admit oxygen, break compaction and even out moisture and microbial population between the interior and the surface.

A note on the name
The naming here is genuinely crossed between languages. Chinese 黑茶 (hei cha, literally 'black tea') is what English calls dark tea; what English calls 'black tea' is Chinese 紅茶 (hong cha, 'red tea'). Neither language is wrong — they are naming different things.
Most readers arrive looking for 'pu-erh', and that is the right word for the Yunnan teas it names. It is not the right word for the category: Liu Bao, Fu Zhuan and Anhua dark teas are dark teas but not pu-erh, in the same way that Champagne is a sparkling wine but not all sparkling wine is Champagne.
History
Compressed tea travelled north and west from Yunnan and Sichuan along the tea-horse road for at least a thousand years, traded to Tibet and Mongolia for horses. Compression existed for transport, not for ageing — the discovery that the tea improved on a months-long journey is the accident the entire modern pu-erh market rests on. Ripe pu-erh is far younger: wet-piling was developed at the Kunming and Menghai factories in the early 1970s to imitate decades of ageing in a few months.

How it is made
The only category defined by microbial rather than enzymatic change, and the reason the model keeps oxidation and fermentation in separate fields. Raw pu-erh is fixed, rolled, sun-dried and pressed, then left for years — sun-drying is the load-bearing step, because it leaves enzyme and microbial activity intact where machine drying would finish the tea. Ripe pu-erh adds a controlled wet pile of several weeks. Hunan’s Fu Zhuan takes a third route entirely, cultivating a single named fungus until golden specks are visible throughout the brick.

Countries that name this category as one of their own, together with the countries the teas in the catalogue are actually recorded from. The two lists are not the same, and neither is a claim that production is limited to what is here — processing decides the category, so any country growing the plant can in principle make it.
What it tastes like
Ripe dark tea is earthy, sweet and smooth, running to dried date, cocoa and damp forest floor. Raw pu-erh when young is bitter, astringent and floral, and converts over fifteen years or more into something closer to the ripe profile by a different route. Both share a thickness and a cooling returning sweetness that no other category reliably produces.

How it is brewed
Styles recorded as suiting this category. The category carries no ratio or temperature of its own — those are written per tea — so these are routes into the method rather than a set of numbers for the family.
- Boiling aged and dark tea (zhu cha) — Compressed or aged dark tea put into a kettle of water and brought to a simmer rather than steeped. It is a normal winter preparation for Liu Bao, aged shou pu-erh, brick tea and tea nuggets, and it is also what a gongfu session’s exhausted leaf is for.
- Butter tea churning — Brick tea boiled at length, then churned with butter and salt into an emulsion. It is a daily staple across the Tibetan plateau and neighbouring highlands, and calling it a savoury drink undersells what it is: the churning changes its physical state, not just its seasoning.
- Gongfu brewing (gaiwan) — A high-leaf, low-volume, many-infusions approach: a great deal of leaf in a small vessel, steeped for seconds at a time and poured off completely, repeatedly.
- Gongfu brewing (Yixing pot) — The same short-steep, high-leaf approach as gaiwan gongfu, carried out in a small unglazed clay pot that seasons over time and is dedicated to one tea.
- Mongolian milk tea (suutei tsai) — Brick or green tea boiled in water and milk with salt, and aerated by being ladled and poured back into the pot repeatedly. It is an everyday drink in Mongolia and in Inner Mongolia rather than a ceremonial one, and it is savoury by design rather than as a variation on a sweet drink.

Thick, dark and round, with almost no astringency. The comparison people reach for is soil after rain, and they mean it as a compliment — but the earthiness should read as clean, not musty. Musty means poor storage.

Caffeine: Widely described as low in caffeine. The evidence for a substantial reduction through ageing or wet-piling is not strong, and brewing style — gongfu sessions use a great deal of leaf — matters more than the category. TeaHQ authors caffeine estimates for only 11 of 302 teas and does not infer them from category, because category predicts caffeine poorly.
