Menghai shou pu-erh

Ripe pu-erh made in the Menghai style, the reference point against which most other shou is described. Menghai’s factory is where wet-piling was industrialised in the 1970s, and its house character — thick, clean, sweet and only moderately earthy — became the standard the technique aims at.

Character

Thick and smooth with a clean sweetness, and much less of the fishy pile note that afflicts poorly made or too-young shou. Rest is the main variable: a three-year-old cake is a different drink from a fresh one.

The plants it is made from

Cultivar is the level below the variety group: a named selection of the tea plant, propagated as clones from one parent. Most consumer writing stops at the country and the category, which leaves out the layer that decides how the leaf behaves before anyone picks it.

  • Yunnan Da Ye Zhong Camellia sinensis var. assamica

    Very large leaves, high in the compounds that make young sheng bitter and that later provide the substance for decades of ageing. The same material makes a notably sweet, thick black tea when fully oxidised.

How it is made, in order

Read top to bottom: the list is the production sequence, and the sequence is what makes this tea its category rather than a neighbouring one. The same leaf from the same bush becomes a green tea or a black tea depending on where the heat falls relative to the bruising, so reordering these steps would not vary the tea — it would produce a different one.

  2. 2. Kill-green (fixation)Denatures polyphenol oxidase and related enzymes, arresting enzymatic oxidation.
  3. 3. Rolling and shapingRuptures cell walls to expose leaf juices, and forms the leaf into the shape it will hold through drying and storage.
  4. 4. Sun-drying (shai qing)Reduces moisture to a storable level at low temperature, leaving residual enzymatic and microbial activity in the leaf.
  5. 5. Wet piling (wo dui)Supports microbial and thermal transformation of the finished leaf, converting harsh young character into a darker, softer profile.
  6. 6. CompressionReduces the leaf’s exposed surface area and fixes it in a stable physical form, slowing and evening out subsequent change.

  • Shou pu-erhThe sheng route for five steps, and then a fork: the maocha is wetted, heaped and fermented by living organisms for weeks before anything is pressed.

    Where it is practised: Yunnan, and the technique is comparatively modern — conventionally dated to the second half of the twentieth century and developed to approximate in weeks what raw material takes decades to do. Related piling processes elsewhere in China are older and are separate operations rather than versions of this one.

History

The Menghai Tea Factory was one of the two sites where wet-piling was developed in the early 1970s, and its recipes became the reference standard for ripe pu-erh. Cakes are still identified by factory recipe numbers, which is unusual in tea and normal here.

    From the most forgiving dark tea format to the reference ripe pu-erh. Nuggets are almost impossible to over-brew; loose shou needs the rinse and shorter steeps.
