The largest single trap in tea statistics is that FAO’s series counts green leaf as plucked while national tea boards count finished made tea, and the two differ by roughly a factor of four and a half. The basis column says which each row is, and a figure without it is not comparable to one with it.
How production is organised
Small family farms and a processing split that most foreign buyers never see. Growers generally make aracha — crude tea, steamed, rolled and dried — and sell it on to a merchant or co-operative that fires, sorts, cuts and blends it into the finished product. The consequence is that a Japanese tea's character is set twice, once in the field and once in the blending house, and that a prefecture name on a packet frequently describes where the blending happened rather than where all of the leaf grew.

How its tea is graded
Japanese classification names the tea by its cultivation and processing (sencha, gyokuro, bancha, kabusecha) rather than by leaf size. It has no relationship to Indian leaf-grade abbreviations.
Grading conventions do not translate between countries. The same abbreviation can describe leaf size in one origin and picking standard in another, and TeaHQ records each system on its own terms rather than mapping them onto a common scale.

- Refrigerating and freezing tea: when it genuinely helps and when it is a mistake — Cold storage is standard commercial practice for Japanese green tea and a reliable way to ruin several other categories. The difference is not the temperature — it is condensation, odour and whether the tea was supposed to keep changing.

- Hand-picked and machine-harvested tea — How a field is harvested decides how uniform the leaf is, which decides how the tea can be processed and what it can become. It is also a labour-cost decision, and the two are the same decision.
- Buying single-cultivar tea — A cultivar name on a packet is a producer's decision made visible, not a grade. It tells you something real and it does not tell you the tea is better — and the words cultivar, variety, clone and landrace are four different things that packaging routinely mixes up.
