In tea, processing is not a modifier applied to a category — it is what creates the category. These are the types that exist because this step exists.

What it is

The difference between stone and hydraulic pressing is not sentiment, it is density, and density decides how a cake ages. In stone pressing, steamed leaf in a cloth bag is placed under a carved granite mould and the operator stands and rocks on it, applying a force limited by their own weight; the cake that results is domed on one face, uneven, and loose enough that a fingernail can lift leaf from it. A hydraulic press applies far more force in a flat mould and produces a dense, square-edged, uniform cake. The loose cake breathes: air moves through it and its interior changes at close to the same rate as its surface. A very tightly pressed cake changes slowly and unevenly, from the outside in, and can take years longer to become drinkable. Neither is simply better, and producers of teas meant for early drinking often press hard on purpose.

Compresses steamed leaf under a limited, hand-applied load, producing a lower-density cake with more internal void space and a more permeable structure.

What it does to the cup

Little immediate effect; over years a loosely pressed cake matures faster and more evenly, and a tightly pressed one holds its young character longer.

Hydraulic pressing
A powered press in a flat mould. Fast, uniform, dense, and the standard for most factory production including a great deal of highly regarded tea.
Screw and lever presses
Intermediate mechanical presses that sit between the two, common in small workshops that press to order.
Breaking the cake
A consequence rather than a variant: a stone-pressed cake can be opened with a pick without shattering leaf, while a hard hydraulic cake usually cannot.

Where this gets misdescribed

Stone pressing is sold as a mark of authenticity and hydraulic pressing as an industrial compromise. What the method actually predicts is how the cake will behave in storage and how easily it can be broken apart. A stone-pressed cake of poor maocha ages into poor aged tea, and the press has no view on the leaf that went into it.

  • Steam softening before pressing (zheng ya)Dry leaf is briefly steamed so it can be compressed without shattering — a few seconds too many and the cake has been part-cooked before it starts its life.
