Hand plucking

Picking each shoot individually by hand, which is the only method that can choose what to take and what to leave.

What it is

A hand plucker holds the shoot between thumb and forefinger and snaps it at the point where the stem is still tender, taking a bud and a defined number of leaves and leaving the rest of the shoot on the bush. The action is fast, repetitive and judged continuously: the picker is deciding, several times a second, whether a given shoot is ready. That decision is the whole reason hand plucking survives in an industry with machines available, because no harvester can distinguish a shoot that has run to three coarse leaves from one that is at the standard. It is also why hand-plucked tea carries a labour cost that no processing efficiency downstream can recover.

What it does to the leaf

Removes selected young shoots at the tender break point, leaving mature leaf and unready shoots on the bush and delivering a uniform, undamaged intake to the factory.

What it does to the cup

Sets the ceiling for everything afterwards: uniform tender intake withers and oxidises evenly, while mixed intake produces a cup with both under- and over-processed material in it.

Fine plucking rounds
The same field is walked repeatedly at intervals of roughly a week to ten days in the growing season, taking only what has reached the standard since the last round.
Shear-assisted hand harvesting
Hand shears with a catching bag sit between the two methods. Faster than fingers, and unable to select, so the intake needs sorting afterwards.

Where this gets misdescribed

Hand plucking is often presented as an inherently superior technique. What it is is a selective one. A carelessly hand-plucked intake taken at the wrong standard is worse material than a well-timed machine harvest of a uniform clonal field, and the selection — not the hand — is where the value sits.
