What it is

Oolong is less a point on a scale than a whole territory. The leaf is withered, then bruised or shaken so that oxidation begins at the damaged edges while the centre stays green, and the process is halted somewhere short of complete. Where 'somewhere' falls, and how much roasting follows, produces teas as different as a pale, floral Taiwanese high-mountain oolong and a dark, charcoal-roasted Wuyi rock tea. Treating oolong as 'halfway between green and black' is the most misleading simplification in tea.

History

Oolong emerged in Fujian, with production documented from around the seventeenth century in both the Wuyi mountains and Anxi. Taiwan’s industry was planted from Fujian stock in the nineteenth century and has since diverged considerably, developing the high-mountain style and its own cultivars. The category’s most significant recent event is a market shift rather than an invention: from the 1990s, lightly oxidised unroasted styles displaced the traditional roasted ones across both Anxi and Taiwan, which is why modern Tie Guan Yin bears little resemblance to what the name meant a century ago.

How it is made

The most elaborate processing in tea, and the only category where oxidation is deliberately arrested part way. Leaf is withered, then bruised repeatedly — traditionally by tossing in bamboo baskets — so oxidation begins at the leaf edges while the centre stays green. Fixing halts it wherever the maker chooses. Shaping then splits the category: cloth-ball rolling produces the tight pellets of Anxi and Taiwan, which open slowly over many infusions; strip rolling produces the open twists of Wuyi and Phoenix Mountain, which extract faster and fade sooner. Roasting, where used, is a separate dial applied afterwards.

What it tastes like

The widest range of any category, because oxidation and roast are two independent variables. Lightly oxidised unroasted oolong is floral, creamy and green-leaning. Heavily oxidised and charcoal-roasted oolong is mineral, dried-fruit and woody. The same cultivar from the same garden can sit at either end, which is why oolong resists a single description more than any other type.
