In tea, processing is not a modifier applied to a category — it is what creates the category. These are the types that exist because this step exists.
- Oolong — Deliberate bruising to initiate edge oxidation, halted partway, frequently followed by roasting.
What it is
The traditional finishing method for Wuyi rock tea and traditional Tie Guan Yin, and a genuinely different process from electric baking rather than a romantic version of it. Leaf sits in bamboo baskets over banked charcoal at low temperature for hours, is rested for weeks, and is roasted again — often three or four times over several months. The repeated rest periods let the roast character migrate inward and integrate; a single long roast at the same total energy tastes harsh and superficial by comparison.

What it does to the leaf
Applies low, even radiant heat over long periods with rest intervals, driving off moisture and transforming leaf compounds progressively.
What it does to the cup
Produces the mineral, dried-fruit and caramelised character of traditional rock tea; excessive roasting flattens the tea into simple char.

Ways this step is carried out that produce genuinely different results, rather than regional names for the same thing.
- Multiple roast cycles
- Three or four cycles across several months is standard for high-grade yancha. Each is followed by weeks of rest.
- Re-roasting aged stock
- Older tea is sometimes lightly re-roasted to remove absorbed moisture. Done well it refreshes the tea; done to disguise poor storage it merely hides it.
Where this gets misdescribed
A dark, roasted appearance is read as a heavy roast. Roast level shows in the cup and in how long the tea needs to rest, not reliably in the colour of the dry leaf.

- Final firing (hiire) — The last heat a Japanese green tea receives, applied at the refiner rather than the grower, and the lever that decides whether a sencha reads as fresh and grassy or sweet and toasted.
- Hojicha roasting — A short, hot roast applied to finished Japanese green tea, which converts it into a categorically different drink in minutes.
- Re-firing — A light low-temperature bake applied to already-finished tea to drive off absorbed moisture.
- Resting between roasts (tui huo) — Weeks or months of doing nothing between one roast and the next, during which the raw fire note recedes and the maker finds out what the roast actually did.
- Roasting — Applying sustained heat to finished leaf to build toasted character, reduce moisture and stabilise the tea for keeping.
