The categories this step defines

In tea, processing is not a modifier applied to a category — it is what creates the category. These are the types that exist because this step exists.

  • OolongDeliberate bruising to initiate edge oxidation, halted partway, frequently followed by roasting.

What it is

The step that gives Tie Guan Yin and Taiwanese high-mountain oolong their pellet shape, and it is done dozens of times rather than once. Leaf is bundled in cloth, compressed and kneaded, then broken up and re-wrapped, over and over across hours. Beyond the shape, the repeated compression ruptures cells progressively and shapes the tea’s extraction curve: a tight ball opens over several infusions rather than giving everything to the first.

Also transliterated as: bu qiu rou nian, tuan rou.

Compresses and kneads leaf in cloth bundles repeatedly, forming dense spheres while progressively rupturing cell walls.

What it does to the cup

Produces the slow-opening, multi-infusion behaviour of rolled oolong; tightness of the ball correlates with how many infusions the tea gives.

Mechanised cloth-bundling is now standard even in premium production; the labour involved in doing it entirely by hand is prohibitive.

Where this gets misdescribed

Rolled oolong is often under-weighed because the leaf looks small. It expands several times over, and a gaiwan that appears a third full of dry pellets will be entirely full of wet leaf.

  • Refining (shiage)The second factory. Japanese green tea leaves the producer as aracha, an unfinished trade good, and is cut, sorted and separated elsewhere into the several named teas one intake contains.
  • Repeat rolling and roll-breaking (fu rou)Rolling is done in two or three passes with the compacted lumps broken up and sifted between them, because one long pass tightens the outside of a ball of leaf and never reaches the middle.
  • Rolling and shapingWorking the leaf to rupture its cells and give it a form that governs how it later brews.
  • Rotorvane macerationA screw press with internal vanes that macerates withered leaf continuously, sitting between orthodox rolling and CTC rather than belonging to either.
  • Sorting and gradingSeparating dried tea by particle size, density and colour into the grades it is sold as — a sorting operation, not a quality judgement.
  • Stalk picking (jian ti)Hand removal of stalk and yellow leaf from finished oolong, done between roasts rather than at the end — which is why it is an ordering fact and not a tidying-up one.
