Leg 1 · Minimal processing

White tea is the least processed category. Delicate rather than weak — the usual mistake here is under-brewing it.

    Fuller and more interesting than Silver Needle, with a hay-and-melon sweetness and enough body to survive being brewed properly hot. The leaf does most of the work the bud cannot.

    Why this step follows

    More flavour per pound and far more forgiving to brew than the bud-only grade.

    Quiet and sweet, with very little bite. Its subtlety is genuinely easy to miss — under-leafed or under-steeped it tastes like faintly sweet water, which is the usual reason people find it disappointing.

Leg 2 · Low oxidation

A change of mechanism. Barely oxidised oolong is aromatic and light-bodied without being faint, which is a different kind of light.

    Barely oxidised and highly aromatic — almost a continuation of green tea, and the natural first step into the oolong category.

    From the lightest strip-rolled oolong to the lightest ball-rolled one. Same low oxidation, entirely different extraction behaviour.

    Vividly floral and almost green in character, with the aroma at maximum and the body correspondingly light.

Leg 3 · Up the white grade ladder

Back to white tea, at the top of the picking ladder. More delicacy, less body, and the clearest test of whether delicate is what you wanted.

    More body than Silver Needle and more sweetness than standard Bai Mudan — the middle of the white-tea range and arguably its best value.

    Up the grade ladder to buds only. More delicacy, less body, and a considerably higher price for a subtler tea.

    Lighter and more floral than the Zhenghe style, with a cool cucumber-and-melon freshness. The county genuinely matters here.

  • What is white tea?

    The least handled category: withered and dried, with no fixation and no deliberate rolling. Minimal processing is not the same as minimal character, and white tea is not the delicate thing its reputation suggests.
